What does it mean by Halwa?
The halwa is used to describe different types of semisolid reductions based on either flour, grains, or fruits. Some varieties are smooth and soupy or firm and dense. The variety of halwa textures vary based on the person. I have shared version is silky-smooth and loose(Dr.K(my husband) and I, we both love this warm and smooth halwa), while others make this a little more dry/thick texture. The halwa needs to be soft and not lumpy. The color will vary based on the type of fruit, grain, or flour you used. The taste is sweet and flavorsome, and it's perfect for the season. Give it a try this fall!

If you are new to semolina:
Semolina is ground wheat and commonly known as Rava or Sooji. It comes in 2 varieties, fine and coarse semolina/rava. Fine semolina is used to make Indian desserts like sheera, Burfi, ladoo, and coarse semolina is used to make savory Indian dishes like upma, dosa, and dhokla. In India, it is also used to make Poori(Indian flatbread), Bhatura, and many more recipes. There are super simple ways to incorporate this semolina into many recipes. Sooji halwa is made on auspicious holidays and also used as prasad. It's a super filling dessert, Yum!

My Take:
- You can use canned Pumpkin Puree instead of a fresh one.
- Add sugar, less or more as per your taste.
- I have prepared this vegan version of pumpkin halwa, so added coconut oil and water. But if you don't follow a vegan diet, then go ahead and make using ghee and milk instead of coconut oil and water, this version will taste heavenly.
