How To Cut Unripe(Raw/Green) Jackfruit and How to Store the Jackfruit

         Jackfruit is very versatile and can be eaten raw or cooked. It is part of the Moraceae plant family, which also includes figs, mulberry, and breadfruit. Jackfruit has a spiky outer skin and is green or yellow in color. Jackfruit is also known as ‘Kathal’ in Hindi and ‘Fanas’ in Marathi. 

Jackfruit combines well with a variety of flavors and can mimic the texture of meat, but it all depends on when and how you eat it. Raw or cooked, sweet or savory, jackfruit brings versatility to a whole new level.

          Young unripe jackfruit has thick, stringy flesh that creates a meat-like texture when cooked. It’s a great vegan alternative for barbacoa tacos or pulled pork sandwiches.

What Does Jackfruit Taste Like?

     Raw, ripe jackfruit tastes like other sweet, fibrous fruits like pineapple or mango. When eaten unripe, green jackfruit has more of a bland taste. Unripe jackfruit is the perfect addition to savory dishes like soups or curries to soak up the flavors or function as a vegan meat substitute. When cooked, jackfruit has a meaty texture and has been compared to pulled pork. The edible seeds have a flavor similar to macadamia or brazil nuts and can be boiled or roasted.

Using unripe jackfruit you can make vegan and vegetarian savory dishes, like:

  • Vegan Jackfruit Curry
  • Jackfruit Burger Patties
  • Vegan Jackfruit Tacos
  • Jackfruit Biryani
  • Jackfruit BBQ Sandwich

To Cut the Raw/Green/Unripe Jackfruit You'll Need:

  • Raw/Unripe/Green Jackfruit.
  • A sharp knife.
  • oil to grease your palm & your knife.
  • Lots of clean newspapers.
  • Bowls to keep chopped jackfruits and the discarded skin.
  • Tissue papers.

Instructions To Cut the Jackfruit:

  • Spread out newspapers on the table/in the tray. It's very difficult to later clean jackfruit sap sticking to the floor/table.
  • Apply generous amounts of oil onto the knife and onto your hands to prevent jackfruit gum from sticking to your knife, and hands. 
  • Chop/cut jackfruit into 4-5 parts, wipe clean the white sap that drips off.
  • Chop each piece further into halves depending on their size(If there's excess gum oozing out of the jackfruit, clean it using a paper towel). 
  • Chop off the outer skin of raw jackfruit until you get a smooth surface. 
  • Chop off the inner hard white portion at the top of each piece.
  • Chop the raw jackfruit pieces into thin slices or cubes depending on how you want to use them in cooking. 
  • Add chopped raw jackfruit pieces into a bowl containing water to prevent any discoloration. This process also helps wash off the excess gum. That way raw jackfruit pieces don't stick to the plate or vessel you put them in. 
  • Jackfruit pods are ready to make a stir fry, a spicy side dish.
  • Enjoy the jackfruit!!!

How to Freeze the cooked Jackfruit?

  • Place the jackfruit pieces in the freezer-safe bags, lay flat, and squeeze out as much air as possible. I do use my cromify vacuum sealer to seal the bags and freeze the food.
  • Place the bags flat into the freezer. 
  • They will stay well in the freezer for up to 3 months.

To Pressure Cook Raw Jackfruits:

  • Pressure cook raw jackfruits with salt, turmeric, and water for 1 whistle to get soft, well-cooked raw jackfruit. 
  • Make just 1 whistle or they get overcooked.

Pro Tips:

  • The sap is a real problem if you aren't careful. 
  • You can use disposable gloves rather than oiling your hands.
  • To easier cleanup, you may have to change gloves a couple of times throughout the process.
  • You can use coconut oil or grapeseed oil, or cedar oil, but I have used veg. Oil.
  • To clean your knife, first, wipe it down with a towel. Then, coat it with some more oil and wipe it again. This will help remove any sap that may have gotten on it. Once you’ve done this, wash it with soap and water as you normally would.
  • If jackfruit sap gets on hands or any other surface, rub oil onto the affected area and then wipe it with a towel before washing it with soap and water.
