How to Make Eggless Dinner Rolls in the Air Fryer

        This is a tried and tested eggless homemade ladi pav recipe. These are easy to make and are light and fluffy with a good flavor and ultimate texture. 

These homemade ladi pav or buns or dinner rolls are similar to famous Mumbai ladi pavs that are soft and delicious that make superb meal paired with Potato Vada / Batata Vada(बटाटा वडा पाव) or with Pav Bhaji(पाव भाजी). Hope you will give this a try and let me know how it turns out for you.

Ingredients:

To Proof the Yeast:

  • 1 Cup Milk, Warm
  • 1 Tbsp Sugar
  • 2 Tsp Active Dry Yeast

To Make the Dough:

  • 2 ½ Cups All-purpose flour
  • 1 Tbsp Milk Powder
  • ½ Tsp Salt
  • Proofed Yeast
  • 2 Tbsp Butter
  • 1 Tsp Oil
  • Milk and butter for brushing pavs/dinner rolls

Instructions:

To Proof the Yeast:

  • In a bowl, pour warm milk, sugar, and yeast and stir well.
  • Keep it covered in a warm place for 5-10 minutes or until the yeast rises.

To Prepare the Dough in the KitchenAid Stand Mixer:
  • Sieve the flour(the most important step) and add salt, milk powder, and mix well.
  • Use the dough hook attachment of the KitchenAid and keep it ready.
  • Set the bowl of the kitchen aid machine in a position.
  • In a mixer bowl add flour mixture.
  • Now, lock the hook knob and start the mixer at speed 2 first and mix dry ingredients well.
  • Now add proofed yeast and lock the hook knob.
  • Start the mixer at speed 2 first keep alternating between speed 2 and speed 4 as the dough starts forming.
  • Stop the mixer and scrape the dry flour from the sides of the bowl using a spatula.
  • Start the mixer and keep mixing at low speed until dough forms.
  • Add butter and knead for 2-3 minutes.
  • Pour oil 1 tsp and knead the dough.
  • The dough should form into a ball, be soft, and be slightly sticky.

To Proof the Dough in the Instant Pot(1st Proofing):

  • Spray some oil on the instant pot inner pan.
  • Transfer the dough to the Instant Pot and cover the pot with the glass lid or with any plate that fits the pot(even you can use the instant pot's main lid too). 
  • Proof the dough using the yogurt function of the Instant Pot. 
  • Set the time for 1 hour. 
  • The dough is ready when it rises to double its volume.
  • You can apply some oil to the surface of the dough to avoid drying out of the dough.
  • Once the dough has doubled in size, punch down and take out the dough and knead for one minute.

2nd Proofing:

  • Divide the dough into equal parts(Each dough weighs 60 g).
  • Place the parchment paper at the bottom of the baking and grease it with oil/butter.
  • Place the dough ball in the pan and cover it and place in a warm place for 30-35 minutes or until doubled in size.
  • After 30 minutes rolls are doubled in size.
  • Now give the rolls a milk wash and it's ready to bake.

To proof the dough without instant pot:

  • Cover the dough with plastic wrap and rest the dough in a bowl.
  • Allow dough to rise for 2 to 2 ½ hours, or until doubled in size.

To Air Fryer the Ladi Pav(Dinner Rolls):

  • Place the proofed roll’s baking pan in the air fryer.
  • Air Fry for 12-15 minutes.
  • Once done, take the baking pan out and apply some butter.
  • Transfer the rolls to the wire rack and allow it to cool completely before serving(do not keep the buns in the baking pan for a long time, because keeping them in the pan base or bottom will get soggy).
  • Once cool, ladi pav is ready to serve.
  • Serve ladi pav with Vadapav, Pavbhaji, Misal Pav. Enjoy!!!

To Bake the Ladi Pav in the Oven:

  • Preheat the oven at 400 F(200 c).
  • Bake the rolls in a preheated oven for 15-18 minutes or till golden in color.
  • Remove the tin from the oven and brush the top with ghee/butter. 
  • Sprinkle some red chili powder and finely chopped coriander leaves.
  • Allow the buns to cool in the pan for 2-3 minutes and then take them out(do not keep the buns in the baking pan for a long time, because keeping in the pan base or bottom will get soggy).

What if you don't have a Stand Mixer? 

      No mixer, no problem. All you have to do is knead everything by hand. After mixing all the ingredients, transfer the dough to a clean work surface and knead by hand until all the flour is incorporated and you end up with a dough that is soft to touch.

Tips to Make Dinner Rolls:

  • If the dough is too sticky, which means it's sticking to the bottom of the mixer, then add in 2 tablespoons more flour.
  • If using an Air Fryer, then watch and adjust the timing for your air fryer as needed.
  • Make sure the milk used to mix the yeast is warm or lukewarm, but not boiling hot. Hot milk will kill the yeast. 
  • You may require less or more flour and water accordingly to get the soft dough.
  • You can make bread loaf or pizza too with this dough.
  • You can use 100% whole wheat flour instead of using all-purpose flour. 
  • Use a good quality yeast; it gives fluffiness and softness to bread.
  • You can use active dry yeast too, but it has a moderate rate of rising and instant dry yeast has a faster rate of rising.
  • If needed, you can substitute non-dairy milk.
