Instant Pot Creamy Garlic Mushrooms

This is a quick 20-minute recipe, that’s so full of flavor, and low carb + gluten-free, to boot! It’s worth spending the extra few minutes to saute up the onions to go with your quick garlic mushrooms. Also, you can add more veggies like spinach, broccoli, sprouts, and peas, adding the vegetables helps you stretch a pound of thinly sliced mushrooms to feed a family of four. Add a green veggie side for a full low carb meal, as these one-pot creamy garlic mushrooms are also naturally low carb and gluten free. This is an instant and easy recipe that brings big flavor with few ingredients. Perfect as an appetizer, a side dish, or a light meal. It looks elegant, but it’s effortless to prepare. This is also great to have as leftovers, it tastes just as good the next day too. The combination of garlic and mushrooms can, however, make for an incredibly savory appetizer or starter, with garlic mushrooms being a favorite dish. 
          Onions sautéed with olive oil give a tasty, slightly caramelized, rich flavor that onions get when cooked in oil. Salt and pepper are so important. How to Prepare this creamy garlic mushrooms in one pot:
  • Saute garlic and onion in olive oil for 2 minutes and add in butter, mushrooms, pepper, and salt.
  • Add milk and water, give it a quick stir and close the lid.
  • Cook for 2 minutes and not for 5 minutes.
  • Again turn on saute mode and add in cream cheese, milk and cook for a minute or two.
  • Garnish with parsley or cilantro and serve hot.

Each Serving of Creamy Garlic Mushrooms Contains 240 Calories.
  • Mushrooms sliced, 3 Cups
  • Garlic 4-5 cloves, minced
  • Onion 1 medium, finely chopped
  • Cream Cheese 3 Oz
  • Milk ½ Cup
  • Olive Oil 2 Tsp
  • Butter 2 Tbsp
  • Salt ½ Tsp
  • Coriander Leaves ¼ Cup
  • Water 3 Tbsp

  • Turn on the saute mode of the Instant Pot and heat olive oil.
  • Add minced garlic and finely chopped onions and saute and cook for 2 minutes.
  • Now, add butter and sliced mushrooms and mix all well.
  • Add black pepper and salt and give it a quick Stir.
  • Add milk ¼ cup and water 3 Tbsp and mix well.
  • Close the lid and place the vent on sealing position.
  • Cook on manual mode(Hi) for 2 minutes.
  • NPR for 5 Minutes and then release the remaining pressure manually.
  • Open the lid and add cream cheese and milk ¼ cup and mix all well.
  • Lastly, add coriander leaves and mix all well.
  • Here, creamy garlic mushrooms are ready to serve. Enjoy!!!
My Take:
  • Remember to thoroughly clean any dirt from the mushrooms, including the stems. Do this right before slicing the mushrooms together (I always give them a quick rinse under the slow running tap water before drying with a paper towel)
  • You can add more milk and cream cheese as per your taste and choice.
  • Instead of water, you may add vegetable broth or if you eat meat then add chicken broth.
  • You also can blend cooked mushrooms to get soup-like consistency.

  • The calorie count is based on a 2000 calorie diet.
  • Per serving contains 240 calories, along with 8.7 g carbohydrates, 1.2 dietary fiber, 22.3 g fats, and 6.6 g protein.
