I have made this spicy red color, super tender & moist Kolhapuri Mutton Rassa or Lamb/Goat Curry with depths of aromas & flavors in Instant Pot within ½ an hour. This traditional recipe is one of the famous non-veg recipes and is known for its delicious and unique taste. This got its name from the city Kolhapur the land of Marathas, which is also famous for its spicy curries. This tender mutton is cooked with simple Indian spices & it has a fiery, spicy red color, which is sure to tempt all non-veg food lovers. Lamb/Goat meat is somewhat a healthier and more flavorful version, as it contains less cholesterol, fat, and protein. It has a similar amount of protein as chicken breast. Prepare to be addicted to this tempting and spicy curry!
(How to prepare Lamb/Goat Curry / Kolhapuri Mutton Rassa in Instant pot)

Ingredients :
- Onion 2 medium, chopped-
- Veg.oil 3 tbsp-
- Cumin seeds 1 tsp-
- Mustard seeds 1 tsp-
- Curry leaves 5 g-
- Cinnamon 1 inch
- Cardamom 3 pods
- Cloves 4 pods
- Bay leaf
- Asafoetida 1 pinch-
- Desiccated coconut 2 tbsp
- Salt 2 tsp-
- Ginger Garlic Paste 2 tbsp-
- Garam Masala 1 tsp-
- Red chilli powder 1 ½ tbsp-
- Goda Masala 1 tbsp-
- Turmeric powder 1 tsp-
- Coriander Powder 1 tsp-
- Coriander leaves ¼ cup, chopped-
- Water 1 ½ cup
Recipe :
- Turn on Instant Pot press Saute button. Make sure your pot is as hot as it can be, now add 2 tbsp of veg.oil, once oil hot add mustard seeds, cumin seeds, curry leaves, cinnamon, cardamom pods, cloves and bay leaf and cook till release the aroma from it.
- Now, add chopped onions and pinch of asafoetida to pot and saute and cook till get brown color to onions, it takes 3 to 4 minutes.
- Meanwhile, in a grinder place, coriander leaves, coconut 2 tbsp, garam masala 1 tsp, goda masala 1 tbsp, turmeric powder 1 tsp, coriander powder 1 tsp, salt 2 tsp, red chilli powder 1 ½ tbsp and ginger garlic paste and little bit of water and grind it to make coarse paste.
- Now, to the pot add lamb (you can either add lamb or goat or sheep meat) pieces and mix all well and add grinded masala to the pot again mix well and add 2 cups of water. Turn off saute mode.
- Close Instant Pot lid with the pressure valve to sealing and pressure cook at -
Pressure Cooking Method - High Pressure for 20 to 25 minutes, then
Pressure Release Method - Turn off the heat and fully Natural Release (roughly 15 minutes) or you can release pressure by manual method. - Open the lid carefully, and garnish with chopped coriander leaves.
Here, delicious, hot and spicy Kolhapuri Mutton Rassa or LambCurry is ready to serve. Serve it with chapati or bhakri or rice and chopped onions or raita and pour some lemon juice. Enjoy!!!

Best Time To Eat :-
Mutton takes 3 to 4 hours to digestion. So it is good to eat goat curry for lunch or for brunch.
Tip :
*Taste the seasoning and add in more salt to greatly enhance the flavors.
*If you are using frozen meat, then it will take more time to cook well.(so cook more 10 Minutes).
*We made goat curry recipe is only mildly spicy. If you like your curry more or less spicy, adjust the spiciness by using more or less red chili powder.
*Add water according to how much you want this curry liquid or solid consistency.
