How to Make Railway Style Tomato Soup / Dump and Go Railway Style Tomato Soup in the Instant Pot

Hello Everyone,

Try this easy-to-make Railway-style Tomato Soup. This is the simplest soup recipe ever, minimal prep but bursting with flavour, an absolute comfort food.

Ingredients:

  • Oil 2 Tsp
  • Bay Leaf 1
  • Black Cardamom 1
  • Black Peppercorn 5-6
  • Garlic 4-5 cloves, crushed
  • Green Chilies 4-5
  • Onion 1 small
  • Beetroot ¼   
  • Tomato 4
  • Coriander leaves and stems, handful
  • Salt to taste
  • Red Chili Powder 1 Tsp
  • Sugar 1 Tsp
  • Water 3 1/2 Cups
  • Lemon Juice 1 Tbsp
  • Coriander powder 1 Tsp 
  • Cumin powder 1 Tsp
  • Butter 2 Tbsp

Instructions:

To Make Tomato Soup in the Instant Pot:

  • Turn on the saute mode of the Instant Pot and heat oil. 
  • Add bay leaf, black cardamom, black peppercorn, garlic, green chilies, and onion.
  • Sauté for a minute.
  • Add tomato, beetroot, coriander, sugar, salt, water 2 cups, and mix well(scrape the base of the pot). 
  • Close the lid of the Instant Pot and place the vent to the sealing position. 
  • Cook on Manual Mode(Hi) for 2 minutes.
  • Natural Pressure Release(NPR) for 10 minutes and then release the remaining pressure manually.
  • Open the lid and submerge the immersion blender into the pot, and turn it on low.
  • Blend until the mixture begins to smooth.
  • Turn the speed to high and continue to blend until the desired soup consistency.
  • Strain the blended mixture.
  • Turn on the flame, add 1 ½ cups of water to get the desired consistency. 
  • Now, add lemon juice, coriander powder, cumin powder, and Cook for 2-3 minutes.
  • Taste and adjust sugar, seasoning, and salt if needed.
  • Lastly, add butter and turn off the flame.
  • Creamy, soothing Railway Style Tomato Soup is ready to serve. Serve with toasted crusty bread, a cheesy bread sandwich, or in a Bread Bowl as you like. Enjoy!!! along with the soup.


Tips and Substitutes:

  • If you do not have an immersion blender, allow the mixture to cool a little and transfer to a standing blender or mixer jar and puree until smooth. 
  • The sugar helps cut the acidity, but you can leave it out.

How to Store Tomato Soup?

  • Refrigerate soup in an airtight container for up to 4-5 days and rewarm gently in the microwave.
  • To Freeze. Freeze tomato soup in an airtight freezer-safe container for up to 2-3 months and thaw overnight in the refrigerator before reheating.
