How to Make Kalakand using Ricotta Cheese in Microwave

Hello Everyone,

         Here I am after so long, and now we are a family of 3. I am sure, now you know that where I am busy these days(Our Baby is 2 years now). From my busy life taking some time to share this quick version of the milk cake recipe. Sharing Diwali special Rose Kalakand recipe. This sweet is soft, creamy, grainy, tempting, tasty, and one of my favorite desserts. Kalakand is a milk and sugar-based mithai and the traditional process to make it is very labor-intensive. For this instant recipe, I have used Ricotta cheese and condensed milk. Some quick recipes also make kalakand with fresh homemade paneer. 

Staying away from our home country, we miss the yummy Indian food, so I keep on trying and making our traditional food at home to satisfy our cravings. Here is my take on a quick Kalakand recipe.

Ingredients:

  • Ricotta Cheese 1 Can(15 Oz)
  • Condensed Milk ½ Tin(7 Oz)
  • Rose Syrup 2 Tbsp
  • Pistachios for garnishing

Instructions: 

  • In a microwave-safe bowl, mix sweetened condensed milk and ricotta cheese.
  • Mix and make a lump-free mixture.
  • Set microwave time for ten minutes. 
  • After 1 minute, remove it from the microwave and mix it.
  • Then microwave again for one minute, remove it, and mix it well.
  • Mix well again, scraping the sides. Check the consistency.
  • The consistency should be thick, and creamy but grainy/granular.
  • It took me approx. 9 minutes to get a Kalakand consistency.
  • Now, add in Rose Syrup and mix well again.
  • Transfer the mixture to a ghee-coated parchment paper lined tray and garnish it with the crushed pistachios.
  • Let it cool and sit for 15 minutes over the kitchen countertop and then refrigerate for at least 2 hours.
  • Now, cut and serve chilled. Enjoy!!!

Tips and Substitutes:

  • Every microwave is different so adjust the time according to your microwave. It may take less time or more.
  • Add condensed milk as per your taste, you can add more condensed milk for more sweet kalakand. 
  • You can double or triple the recipe according to your needs.
  • Also, know that rose syrup and ricotta cheese are sweet.
  • Instead of Rose Syrup, you can use cardamom powder to make regular Kalakand.
  • For Saffron flavor Kalakand, you can use saffron-soaked milk.
  • You can add 2 tbsp of milk powder to the recipe, but just note that it will take less cooking time in the microwave.
  • Keep stirring the mix for every one minute and don’t let the mixture stick to the bottom.
