How to make Strawberry Ice-cream?

          Nothing's sweeter than making your own ice cream at home, especially with the scorching summer heat. Well, Ice cream maker lets you control the quality of the ingredients, experiment with summer-ready recipes, and have the best experience of creating your own frozen treat.

            Making ice cream in the ice cream maker is the easiest way. Just follow the directions below to learn how to make homemade strawberry ice cream without egg and condensed milk. It's the perfect base for ice cream sundae ideas, too.

These particular proportions of milk and cream to strawberries will give you a thick but not sticky ice cream that feels decadent but not heavy. For something a little lighter, use more milk and less cream. You can also cut down on sugar for a lighter base.

Ingredients:

  • Strawberries 1 Cup, chopped 
  • Heavy cream 1 Cup
  • Milk ½ Cup
  • Sugar ½ Cup
  • Pinch of red food color(Optional)

Instructions:

To Blend Base For Strawberry Ice Cream:

  • Freeze the ice cream bowl of a 1.5 QT ice cream maker overnight.
  • Blend the strawberries, sugar, and milk in a blender until strawberries are pureed and sugar is dissolved.
  • Transfer the mixture into a bowl and add mix in the heavy cream and pinch of red food color(optional) with a spatula.
  • Refrigerate the mixture for 1-2 hours before churning.

To Make Ice Cream in an Ice Cream Maker:

  • Remove the freezer bowl from the freezer and place it on the center of the base. The bowl will begin to defrost quickly once it has been removed from the freezer. Use it immediately after removing it from the freezer.
  • Place the mixing paddle in the freezer bowl. It rests in the center of the bowl, with the circle side facing up.
  • Place the lid on the base and rotate clockwise until tabs on the lid lock in place on base.
  • Press On/Off switch to ON position. The freezer bowl will begin to turn.
  • Immediately pour ingredients through ingredient spout. NOTE: Ingredients must be added to the freezer bowl after the unit is turned on.
  • Frozen desserts or drinks will be done in less than 20 minutes. The time will depend on the recipe and volume of the dessert you are making. When the mixture has thickened to your liking, it is done. If you desire a firmer consistency, transfer the dessert to an airtight container and store it in the freezer for two or more hours.
  • Ingredients such as fruits and nuts should be added about 5 minutes before the recipe is complete. 
  • Pour the strawberry cream mixture into the prepared ice cream maker. Allow running according to the manufacturer's instructions (Mine is about 20 minutes.)
  • Churn the mixture for 20 minutes.
  • Transfer the strawberry ice cream to a freezer-safe container(For scoopable ice cream, scoop ice cream into a bread loaf pan and cover with plastic wrap).
  • Freeze the ice cream for about 5-6 hours before serving.

To make strawberry ice cream without an ice cream maker:

  • In a high-speed blender - blend strawberries, sugar, milk, cream, and a pinch of red food color.
  • Freeze for about 2 hours.
  • Blend again and then freeze for 5-6 hours before serving.

How to Make Kadhi Chawal Pakoda in the Instant Pot(PIP Method)

Hello Foodies,

          Kadhi-Pakora-Chawal is one of the most satisfying comfort foods in Indian cuisine. It’s time to share the most beloved & comforting Indian Kadhi Pakoras recipe. Once you taste it, you can't stop at one bowl of a warm, aromatic, light, & fluffy pakora kadhi.

Every house has its own version of Kadhi and all Indians are nostalgic about it. This simple platter consists of plain steamed rice, besan ke pakode, and very simple and easy to make kadhi along with the double tadka.

It’s the ultimate comfort food that is hearty, delicious, packed with complex flavors, and soul-satisfying. Here is my take on Kadhi pakora. I make it using homemade yogurt. It is a must-try recipe. Trust me you will like this style of Kadhi pakora. You don’t have to be an expert to make this Kadhi Pakora; simply gather the ingredients, put it in the instant pot, make pakoras, and the food is ready and on the table in half an hour. 

Preparation Time: 10 Minutes: Cooking Time: 15 Minutes. 
Each Serving of Kadhi Contains 153 Cal.

Ingredients:

To Make Yogurt-Besan Mixture for Kadhi:

  • Yogurt/Dahi/Curd ½ Cup
  • Besan 2-3 Tbsp
  • Salt to taste
  • Turmeric ½ Tsp
  • Water 1 Cup

To Make Kadhi in the Instant Pot:

  • Ghee 2 Tbsp
  • Cumin seeds ½ Tsp
  • Fenugreek Seeds ¼ Tsp
  • Green chilies 5-6
  • Dried Red Chili 1
  • Ginger Paste 1 Tsp
  • Prepared Yogurt-Besan mixture
  • Water ½ Cup
  • Turmeric ½ Tsp
  • Garam Masala 1 Tsp
  • Coriander Leaves for garnishing

To Make Rice(PIP Method):

  • Rice 1 Cup+Water 2 Cups+Salt ½ Tsp

To Temper the Kadhi:

  • Ghee 2 tsp
  • Cumin seeds ½ Tsp
  • Red chilies 2-3
  • Pinch of Asafoetida

 To Make Pakoda/Bhajji:

  • Besan/Chickpeas Flour 1 Cup
  • Rice Flour 3 Tbsp
  • Red Chili Powder 1 Tbsp
  • Turmeric 1 Tsp
  • Salt to Taste
  • Carom Seeds 1 Tsp
  • Pinch  of baking soda
  • Water as needed
  • Oil 2 Tsp

Instructions:

To Make Yogurt-Besan Mixture:

  • In a blender jar add yogurt, besan, turmeric, salt, and water.
  • Blend to make a lump-free mixture.

To Make Kadhi in the Instant Pot:

  • Turn on the saute mode of the instant pot.
  • Heat ghee and splutter cumin seeds and fenugreek seeds.
  • Add red chili, green chilies, ginger paste, and saute for a minute.
  • Pour prepared yogurt-besan mixture, turmeric, garam masala, and mix well.
  • Pour water ½ Cup and give it a quick stir.
  • Place the trivet and the rice pan.
  • Close the lid of the instant pot and place the vent in the sealing position.
  • Cook On manual Mode(Hi) for 5 minutes.
  • Natural Pressure Release for 10 minutes and then release the remaining pressure manually.
  • Open the lid and take the rice pan out.
  • Give a kadhi quick stir and pour it into the serving bowl.

To Temper the Kadhi:

  • Heat ghee in a pan and splutter cumin seeds, red chilies, and asafoetida.
  • Pour the tempering over the kadhi.
  • Garnish with coriander leaves and serve Punjabi Kadhi Pakora hot with steamed rice or jeera rice, or serve kadhi with pakora. Enjoy!!!
  • (You could also serve with roti or paratha. However, the combination of Kadhi Chawal (kadhi served with steamed rice) is very popular and tastes very good).

To Prepare the Batter to make Bhajji/Pakoda:

  • In a bowl add chickpeas flour(Besan), rice flour, red chili powder, turmeric, salt, and carom seeds and mix well. 
  • Now add water and mix well(add water as required) and prepare a lump-free thick batter.
  • Once done, add a pinch of baking soda mix well to get a smooth and flowing consistency batter.

To Make Pakoras in the Appe Pan:

  • Meanwhile, heat the appam/appe pan and add a drop of oil to each of its grooves.
  • Now pour a spoon full of prepared batter in each groove
  • Cover the pan and cook for 2 to 3 minutes on medium to low flame.
  • Flip the pakora with the help of a spoon or chopsticks and cook for another 2 minutes.
  • Take out the roasted pakoras on a plate and similarly prepare the rest as well.
  • Here, non-deep fried pakoras are ready to serve. Serve hot with kadhi. Enjoy!!!

Tips to Make Kadhi:

  • Use sour yogurt that is made from whole milk. If the curd is not sour, then the kadhi will not be sour, but will still taste good. 
  • Use good quality besan.
  • Pakora texture: To make softer pakora, add some more water than mentioned in the recipe below. In this case, add the pakora to the kadhi, just before serving. If added much before serving, then the pakora becomes too soft and mushy.

How to Make Low Carb Tandoori Chicken

          Celebrate your weekend's festivities, with mouth-melting, juicy, and crispy Air Fryer Tandoori Chicken. They have got a kick of Indian spice and they’re just perfect! They are everything you want in a drumstick, crispy on the outside, moist, and delicious.

Easy Air Fried chicken drumsticks are a healthy way to cook drumsticks. They are a great source of essential amino acids, and several vitamins and minerals as well. Being higher in fat, drumsticks are a great choice for a keto diet. They can also be made paleo and whole-30 friendly. They turned out nice and crisp, tangy and smoky with a touch of sweetness!

What temperature is chicken cooked?

  • In all instances make sure the internal temp of the chicken is 165F/75C, with the juices running clear when pierced.

How long do you Air Fry chicken drumsticks?

  • Again, it depends on the temp. But for 390-400 F, depending on the size of your drumsticks, I find around 15 minutes to hit the sweet spot.

What should you serve with chicken drumsticks?

  • My family likes it with jeera rice and ranch/hot sauce, but most side dishes will work great!

Ingredients:

To Marinade the Chicken Drumsticks:

  • Chicken Drumsticks 4
  • Yogurt 3 Tbsp 
  • Ginger-Garlic Paste 1 Tsp 
  • Kashmiri Red chili powder 1 Tbsp
  • Turmeric ½ Tsp 
  • Coriander Powder 1 Tsp
  • Cumin Powder 1 Tsp
  • Garam Masala 1 Tsp
  • Lemon juice 1 Tbsp 
  • Oil 1 Tsp
  • Salt 1 Tsp 

Instructions:

To Prepare Chicken Drumsticks to Marinade:

  • Wash chicken drumsticks.
  • Dry skinned drumsticks with a paper towel. 
  • Put 2-3 slits on each drumstick.
To Marinate Chicken Drumsticks:
  • In a bowl, add yogurt, Kashmiri red chili powder, ginger-garlic paste, turmeric, garam masala, coriander-cumin powder, salt, lemon juice, and oil and mix well. 
  • Apply marinade all over the chicken. 
  • Allow the chicken to marinate for 3-4 hours(if you have the time it's good to marinate for up to 24 hours in the refrigerator and take the chicken out of the refrigerator 30 minutes prior to cooking).

To Air Fry Tandoori Chicken:

  • Preheat the Air Fryer at 390 F for 3 minutes.
  • Transfer the marinated chicken drumsticks into the air fryer's basket and spray some cooking oil. 
  • Close the basket of the air fryer. 
  • Air Fry at 390 F for 15 minutes and flip after 7-8 minutes. 
  • Once done, take the chicken drumsticks out of the air fryer.
  • Serve crispy, juicy, and tender Tandoori Chicken with blue cheese, buffalo hot sauce, or ranch dressing. Enjoy!!! 
Tips:

  • For an even easier cleanup line your air fryer basket with aluminum foil!
  • Make the marinade the night before even and let it sit in the refrigerator overnight. Bring the chicken out about 30 minutes before you are ready to bake it so it has a little time to come to room temperature.
  • Cooked drumsticks can be stored in an airtight container in the refrigerator for about 3 to 5 days. Reheat in the oven to help re-crisp the skin.
  • If the skin is not crisp after reheating, you can place it under the broiler for a minute or two.
  • I always use a meat thermometer to make sure that my meat is cooked safely. The safe internal temperature for chicken is 165F.

How to Make Eggless Dinner Rolls in the Air Fryer

Hello Foodies,

        This is a tried and tested eggless homemade ladi pav recipe. These are easy to make and are light and fluffy with a good flavor and ultimate texture. 

These homemade ladi pav or buns or dinner rolls are similar to famous Mumbai ladi pavs that are soft and delicious that make superb meal paired with Potato Vada / Batata Vada(बटाटा वडा पाव) or with Pav Bhaji(पाव भाजी). Hope you will give this a try and let me know how it turns out for you.

Ingredients:

To Proof the Yeast:

  • 1 Cup Milk, Warm
  • 1 Tbsp Sugar
  • 2 Tsp Active Dry Yeast

To Make the Dough:

  • 2 ½ Cups All-purpose flour
  • 1 Tbsp Milk Powder
  • ½ Tsp Salt
  • Proofed Yeast
  • 2 Tbsp Butter
  • 1 Tsp Oil
  • Milk and butter for brushing pavs/dinner rolls

Instructions:

To Proof the Yeast:

  • In a bowl, pour warm milk, sugar, and yeast and stir well.
  • Keep it covered in a warm place for 5-10 minutes or until the yeast rises.

To Prepare the Dough in the KitchenAid Stand Mixer:
  • Sieve the flour(the most important step) and add salt, milk powder, and mix well.
  • Use the dough hook attachment of the KitchenAid and keep it ready.
  • Set the bowl of the kitchen aid machine in a position.
  • In a mixer bowl add flour mixture.
  • Now, lock the hook knob and start the mixer at speed 2 first and mix dry ingredients well.
  • Now add proofed yeast and lock the hook knob.
  • Start the mixer at speed 2 first keep alternating between speed 2 and speed 4 as the dough starts forming.
  • Stop the mixer and scrape the dry flour from the sides of the bowl using a spatula.
  • Start the mixer and keep mixing at low speed until dough forms.
  • Add butter and knead for 2-3 minutes.
  • Pour oil 1 tsp and knead the dough.
  • The dough should form into a ball, be soft, and be slightly sticky.

To Proof the Dough in the Instant Pot(1st Proofing):

  • Spray some oil on the instant pot inner pan.
  • Transfer the dough to the Instant Pot and cover the pot with the glass lid or with any plate that fits the pot(even you can use the instant pot's main lid too). 
  • Proof the dough using the yogurt function of the Instant Pot. 
  • Set the time for 1 hour. 
  • The dough is ready when it rises to double its volume.
  • You can apply some oil to the surface of the dough to avoid drying out of the dough.
  • Once the dough has doubled in size, punch down and take out the dough and knead for one minute.

2nd Proofing:

  • Divide the dough into equal parts(Each dough weighs 60 g).
  • Place the parchment paper at the bottom of the baking and grease it with oil/butter.
  • Place the dough ball in the pan and cover it and place in a warm place for 30-35 minutes or until doubled in size.
  • After 30 minutes rolls are doubled in size.
  • Now give the rolls a milk wash and it's ready to bake.

To proof the dough without instant pot:

  • Cover the dough with plastic wrap and rest the dough in a bowl.
  • Allow dough to rise for 2 to 2 ½ hours, or until doubled in size.

To Air Fryer the Ladi Pav(Dinner Rolls):

  • Place the proofed roll’s baking pan in the air fryer.
  • Air Fry for 12-15 minutes.
  • Once done, take the baking pan out and apply some butter.
  • Transfer the rolls to the wire rack and allow it to cool completely before serving(do not keep the buns in the baking pan for a long time, because keeping them in the pan base or bottom will get soggy).
  • Once cool, ladi pav is ready to serve.
  • Serve ladi pav with Vadapav, Pavbhaji, Misal Pav. Enjoy!!!

To Bake the Ladi Pav in the Oven:

  • Preheat the oven at 400 F(200 c).
  • Bake the rolls in a preheated oven for 15-18 minutes or till golden in color.
  • Remove the tin from the oven and brush the top with ghee/butter. 
  • Sprinkle some red chili powder and finely chopped coriander leaves.
  • Allow the buns to cool in the pan for 2-3 minutes and then take them out(do not keep the buns in the baking pan for a long time, because keeping in the pan base or bottom will get soggy).

What if you don't have a Stand Mixer? 

      No mixer, no problem. All you have to do is knead everything by hand. After mixing all the ingredients, transfer the dough to a clean work surface and knead by hand until all the flour is incorporated and you end up with a dough that is soft to touch.

Tips to Make Dinner Rolls:

  • If the dough is too sticky, which means it's sticking to the bottom of the mixer, then add in 2 tablespoons more flour.
  • If using an Air Fryer, then watch and adjust the timing for your air fryer as needed.
  • Make sure the milk used to mix the yeast is warm or lukewarm, but not boiling hot. Hot milk will kill the yeast. 
  • You may require less or more flour and water accordingly to get the soft dough.
  • You can make bread loaf or pizza too with this dough.
  • You can use 100% whole wheat flour instead of using all-purpose flour. 
  • Use a good quality yeast; it gives fluffiness and softness to bread.
  • You can use active dry yeast too, but it has a moderate rate of rising and instant dry yeast has a faster rate of rising.
  • If needed, you can substitute non-dairy milk.
