Hope you all are doing well.
          Today's recipe is Shengdanyachi Aamti / Peanuts Aamti, it is one of that recipe, by eating

them I have grown up with, and this aamti is close to my heart. Shengdanyachi Amti pairs up well with tempting dishes such as sabudana khichdi, varicha bhat, and sabudana appe or vada. This can be a yummy dip to eat with potato chips during fasting day. If you are someone who loves peanuts as I do, this is for you. A very suitable curry recipe for fasting days.
           It is also a good option if you're following a gluten-free, vegan, and vegetarian diet. This recipe covers approx. 10% of your daily requirements of vitamins and minerals.
          Peanuts being rich in monounsaturated fats that fats are heart friendly. Peanuts are rich in antioxidant content more than apples, carrots, and even beets. Roasting the peanuts improves the antioxidant content. So let's start with the recipe.
Peanuts are loaded with higher amounts of nutrients, minerals, antioxidants, and vitamins that are essential for optimum health. So it is good to eat peanuts after a workout. It gives you energy and helps you to feel full longer and aids in weight loss.







Preparation Time : 5 Minutes ; Cooking Time : 5 Minutes.
Ingredients :

  1. Peanuts 1 cup, dry roasted
  2. Green chillies 5 strips
  3. Salt 1 tsp
  4. Cumin seeds 1 tsp
  5. Veg oil 1 tbsp
  6. Coriander leaves
  7. Water 2 cups

Recipe :
  1. Dry roast the peanuts in a pan on a low flame till golden color, let the peanuts cool, then just rub the peanuts to remove peanuts skin.
  2. Now, take the peanuts in a grinder and then add green chillies, salt  and ½ cup of water and grind to make a smooth paste.
  3. Meanwhile, heat veg. oil / ghee in a kadai / pan, once oil get hot add cumin seeds, let it splutter.
  4. Now, add the peanut paste followed by 1.5 cups water.

    stir very well.
  5. On a low flame simmer the peanut amti for 5 to 6 minutes with stirring at intervals, lastly garnish with coriander leaves.
  6. Tadaa, peanuts amti is ready to serve, serve the peanut amti with sabudana khichdi, varai rice or sabudana appe.

My Take :
  • If amti thickens, then thin it as you like the consistency  by adding  water.
  • If you don't want to remove peanuts skin, then you can grind them as it is.
  • You can use red chilli powder instead of green chillies.

  • Per serving contains 186 calories, along with carbohydrates - 5.86 g, dietary fibers - 2.1 g, fats - 17.33 g, proteins - 6.4 g. As it is good source of vitamins and minerals, it contains Vit.A - 2.33%, Vit.B6 - 3.3 %, Vit.C- 6.3 %, Calcium - 2 %, Iron - 6 %, Magnesium - 11 %.
