Hello Everyone,
        For fasting days at that times when the af
ternoon stretches into a lazy evening, our taste buds desire a something crispy, spicy, chatpata snack. A mouthwatering snack or appetizer of Indian origin, Aashadhi Ekadashi (आषाढी एकादशी) is coming, so here is a solution to keep you feel satisfied and full during this fasting days and oh yes it is potato cutlets or उपवासाचे कटलेट or fasting days recipe. Fasting days or any other days it is a delight to savor and to serve. The goodness and nutrition of potatoes and peanuts make this cutlet healthy; it provides  essential micro and macro nutrients, such as carbohydrates, antioxidants, vitamins and essential minerals without the guilt. You can shallow or deep fry it or bake it. I have shown both the methods. So enjoy fasting days by fulfilling your cravings with this Potato Cutlets.!

Ingredients :

  1. Potato 2 medium, boiled and mashed
  2. Salt 1 tsp
  3. Arrowroot 2 tbsp
  4. Red chilli powder 1 tsp
  5. Green chillies 3 strips, chopped
  6. Cumin seeds 1 tsp
  7. Peanut powder 2 tbsp (dry roasted peanuts)
  8. Veg. Oil to fry cutlets.

Recipe :
  1. In a bowl add boiled and mashed potatoes, salt, arrowroot, red chilli powder, chopped green chillies, cumin seeds and coriander leaves. Mix all well
    and make a dough. Cover and in refrigerate it for 15 to 20 minutes.
  2. Take dough and roll to make round circle and with the help of cookie cutter, cut it.
  3. Heat oil in a kadhai and fry potato cutlets.
               Or
  1. Place all the potato cutlets over parchment paper lined baking sheet. And bake it on preheated oven for 20 to 25 minute at 350 Fahrenheit (180 C). After 10 Minutes turn other side and bake for another 10 to 15 minutes.
  2. Here, tasty, crispy and healthy
    Potato Cutlets are ready to serve. Serve it with curd or peanuts chutney. Enjoy!!!

What is Arrowroot Powder ?
The arrowroot plant known as Ararot in Hindi. Arrowroot or arrowroot starch is a powdery product extracted from the roots of the arrowroot plant or Maranta arundinacea. It is gluten-free.
