The word dalgona came from the Korean word “dalguna” meaning “it’s sweet.” Dalgona is typically sold with a variety of shapes but "Squid Game" featured four, a triangle, circle, star, and an umbrella. This Korean Dalgona Candy is also called Ppopgi or Honeycomb Candy.

I found making dalgona candy is a bit like making battase/gathi, the first one almost always fails. There is probably a very exact science behind the melting temperature and the reaction of baking soda with caramel. This tasty treat is so much fun! These candies will become your favorite way to indulge in this cold-weather beverage.

Tips to Make Korean Dalgona Candy:

  • If you don’t have a special press, then you can flatten the candy with a bottom of a bowl, stainless still measuring cup.
  • This recipe will not work with baking powder, so you have to use baking soda only.
  • You can use all kinds of sugar, I used granulated white sugar.
  • Get all supplies and ingredients ready before melting the sugar.
  • Be very careful when melting the sugar as it can burn very easily. The key to melting the sugar without burning is to keep the heat low-medium, be patient, and stir constantly.
  • Use medium heat for this recipe because when the sugar melts, it also burns very quickly.
  • Work fast when adding baking soda.
  • The most important tip, let the mixture cool for 10-15 seconds before pressing a mold. Otherwise, mold will be stuck.
  • Also, do not press the cutter too late into the candy, because it will harden quickly.
  • If you don't have baking soda in hand then you can use Eno or fruit salt.
