How To Make Khichadi and Khamang Kakdi 

Hello Foodies,

          This Khamang Kakdi is frequently paired with sabudana khichdi, a Maharashtrian staple made with sabudana, sago, or tapioca pearls. Khamang Kakdi or Kakdi Chi Koshimbir or Cucumber Peanut Salad is a staple in our home. 

The recipe for this Khamang Kakdi is quite simple and so refreshing that you could eat it by itself or with a glass of tak/buttermilk for a light midday snack. Pair it with any Indian meal, with curry, roti, and rice. The flavors are simple, you can eat it in a small bowl as a snack.

Mahashivratri is one of the most significant and widely celebrated Hindu festivals. It is celebrated in honor of Lord Shiva. Mahashivratri literally translates to the 'Great night of Shiva'. People observe the Mahashivratri Vrat to mark their devotion to their beloved deity.

Sabudana Khichdi:

I keep experimenting with my instant pot and this one is the best and perfect recipe, I have developed in my instant pot. Follow my tips to make the non-sticky Sabudana Khichdi using an instant pot.

Khamang Kakdi:

This Maharashtrian special khamang Kakdichi Koshimbir is one of my absolute favorite salads. It is a crunchy, crisp, and refreshing salad! This yogurt-based, no onion no garlic salad is light, healthy, and easy on the stomach. I am born and brought up in a Maharashtrian family, and so my taste in food and cooking style is influenced by Maharashtrian Cuisine.

Peanut ladoos (गुळ-शेंगदाण्याचे लाडु) are one of my favorite snacks or dessert to munch on. It is fairly nutritious and is a good source of protein. It tastes delicious, the texture of these ladoos is best, and the way it sticks to the roof of your mouth before it melts is amazing.

How to Make Maharashtrian Metiche Pithale

Hello Foodies,

          Methi Pithla/Pithle is a simple, yet delicious main course dish in taste and flavor. Methi Pithle and Bhakri is homestyle Maharashtrian comfort food.

          Pithla is very quick and easy to make and tastes absolutely great when eaten hot with Bajrichi Bhakri or Jwarichi Bhakri. You can also savor it with Rotis, Chapatis, or Phulkas.

Methi Pithla (also called Methiche Pithale) is a simple curry made with fresh methi leaves (fenugreek leaves) and besan (gram flour/chickpeas flour). It is flavored with garlic and green chilies and tastes divine with Bhakri or roti. Pithla is a very easy and quick dish that takes very little time to prepare and tastes just amazing. 

Preparation Time: 10 minutes; Cook Time: 15 minutes
Each Serving of Methi Pithle Contains 133 Calories.

Ingredients:

  • 1-2 Cups Fresh Methi Leaves(Fenugreek Leaves)
  • ¼ Cup Besan(Gram Flour)
  • ½ Tsp Cumin Seeds
  • ½ Tsp Mustard Seeds
  • 5 Cloves Garlic
  • 1 Onion, Chopped
  • 1 Tsp Turmeric
  • 8-10 Green Chilies
  • 1 Pinch of Asafoetida/Hing
  • 2 Tsp Oil
  • 2 Cups of Water
  • Salt To Taste

Instructions:

  • By grinding, green chilies 10, garlic 3 cloves make a paste and keep it aside.
  • In a bowl add besan and water ½ cup.
  • Mix well and make a lump-free batter, keep it aside(ensure you have a smooth batter).

To Make Methi:

  • In a pan heat oil on a medium flame and splutter cumin, mustard seeds.
  • Add chopped garlic, asafoetida, saute and cook for a minute or till it just starts to change color.
  • Add onion, saute and cook for 3-4 minutes.
  • Now, add fenugreek leaves/methi leaves.
  • Saute and cook for 5-6 minutes.
  • Add 2 cups of water, turmeric. salt, and bring it to a boil.
  • Turn down the heat to low.
  • Gradually, pour the prepared besan mixture and keep mixing continuously to avoid any lumps.
  • Turn the heat up to medium and cook the mix till the Methi Pithla becomes thick and glossy.
  • Turn off the heat and serve methi pithle immediately with Bhakri.
  • Here, healthy, spicy, and protein-rich Methi Pithle is ready to serve.
  • Methi Pithale tastes yummy when served warm with bhakri and bhat. Enjoy!!! 
Tips:

  • Methi Pithle tastes best when eaten hot/warm.
  • If the Pithle goes cold, it will solidify, so add some warm water and mix well. Heat the Pithle for 2-3 minutes.

  • Heart Health: it has high soluble fiber content which is beneficial for the health of the heart and helps in lowering the cholesterol level of the body. 
  • Diabetes: it has a low glycemic index, it is a great food for diabetics.  
  • Good source of iron, consumption of besan on a daily basis can help your body recover from iron deficiencies like anemia.

How to Make Popular Street Style Chole Chaat/Samosa Chaat

Hello Foodies,

          The sweet, spicy, and tangy Chole Chat/Samosa Chat offers the palate a symphony of exotic flavors and textures. Each component is wonderful in this chaat. 

It's layered with chickpea curry, crispy samosa, chutneys, yogurt, papdi, and sev to hit all the flavor profiles and textures in one dish.

The Chole/chickpeas curry is hearty and warm and the air-fried samosas are crispy on the outside with a flavorful potato stuffing. Papdi and sev add a crunch to the chaat. Onion and coriander leaves add additional freshness and color to the chaat.

Preparation Time: 15 Minutes; Cooking Time: 20 Minutes. 
Each Serving of Chole Chat Contains 124 Calories. 

Ingredients:

To Make Chole Chat/Ragda:

  • Chickpeas 1 Cup, soaked in water for 6-7 hours 
  • Tomato 1, chopped
  • Red chili powder 1 Tbsp 
  • Coriander Powder 1 Tsp
  • Chaat Masala 1 Tbsp 
  • Turmeric ½ Tsp 
  • Salt 1 Tsp 
  • Water 2 ½ Cups
  • Oil 2 Tsp

To Serve Chole Chat/Samosa Chaat:

  • Samosa 2(I have used Air Fryer Samosas)
  • Onion finely chopped(if you are making no onion- no garlic then skip onion)
  • Coriander leaves, finely chopped
  • Sev
  • Papdi
  • Tamarind-Date Chutney
  • Green Chutney
  • Yogurt(Skip if you are making the vegan version)
  • Chat Masala to sprinkle

Instructions:

To Make Chole Chat/Ragda in the Instant Pot:

  • Wash and soak the chickpeas in water for 6-7 hours. 
  • Turn on the saute mode of the Instant Pot and heat oil.
  • Add chopped tomato, saute and cook for a couple of minutes.
  • Now, add soaked and drained chickpeas/chole, water 2 Cups.
  • Add red chili powder, coriander powder, turmeric, salt, chaat masala, and mix well. 
  • Close the lid and place the valve in the sealing position. 
  • Pressure cook on manual mode(Hi) for 8 minutes. 
  • NPR for 10 minutes and then release the remaining pressure manually. 
  • Turn on the saute mode of the instant pot. 
  • Open the lid, mix well and mash the chickpeas with the back of the spoon or use a masher. 
  • Cook for 2-3 minutes and turn off the instant pot. 
  • Perfect and mushy chickpeas stew/ragda is ready to make samosa chat, papdi chat.

To Assemble/Serve the Samosa Chat:

  • Make small pieces of samosa and place them over a plate.
  • Pour prepared ragda/chickpeas stew on top of samosa and add crushed papdi.
  • Now, pour Yogurt, Tamarind-Date Chutney, and Green Chutney. 
  • Add some finely chopped onions, coriander leaves, and sev. 
  • Sprinkle some chaat masala.
  • Khatta meetha Samosa Chat/Chole Chat is ready to serve. Enjoy!!!

My take:

  • If you are making no onion - no garlic version then skip the addition of onion while serving ragda patties.
  • If you are making a vegan version then skip the addition of yogurt while serving samosa chat.
  • If you want ragda thicker, then you can add boiled and mashed potatoes.
  • I have served chole chaat with Air Fried Samosas.

Good Time To Eat:

           It is good to eat Samosa Chat as an appetizer, snack/early dinner.
