How to Use Russian Piping Tips Tutorial 
Hello Friends, 
       Wish You All a Very Happy, Healthy, and Prosperous New Year!
         This Triple Chocolate moist cake is my 2019's last bake. I  decorated the baked cake into a flower basket using Russian Piping Tips to say goodbye to 2019 and welcome to 2020. I found these tips are fun and easy to use.


 It was in my to-do list for many days, and on occasion of the new year, I gave it a try and used these Russian piping tips and made these flower basket cake. Buttercream flowers are a favorite decoration of mine, but I had always made mine from scratch using Wilton petal tips.

 I made flowers using the Wilton method, but these tips make things go much faster. Which will be useful on busy festive days when I have a cake to deliver the next day. I just picked up a cake decorating obsession, and part of it was learning the different piping skills. This is the first cake I have made playing with a couple of Russian piping tips. 



  I wanted to learn to decorate my baked goodies(Cakes and cupcakes) with the Russian piping tips. I think the biggest challenge is getting the right consistency with your buttercream. After you figure out the consistency, the amount of pressure on the bag is the next technique to learn, but that will become clear very quickly. I was pretty pleased with the results of a first try. And with some practice, I am confident that I can pull off something I'm proud to present to other people. I'm delighted with this Russian piping tips. 


What are the Russian Piping Tips
  • These are the tips that allow you to pipe complex shapes in one pass. 
  • There are many different types of tips that create roses, tulips, daisies, swirl shapes.

How to Use Russian Piping Tips 
  • Get a set of Russian piping tips and choose one to use, the one shown will make a Tulips, and place in a piping bag with the tip snipped off.
  • Divide buttercream(I have used my favorite condensed milk buttercream) into batches and add food coloring(I have used pink and white for tulips, green for leaves, and copper for basket) whichever you are using.
  • Using a spatula, apply a layer of buttercream to the inside of the piping bag.
  • Fill the bag with another color of buttercream.
  • Pipe the flowers, make sure to pipe just above the surface, squeeze, and the buttercream will come down to make contact with the cake.
  • Continue squeezing while you pull up to build the flower and finish by pulling up without squeezing. 
  • Once done with tulips, pipe leaves to fill in the blank spaces between the flowers.
  • Fit the decorating bag with basketweave decorating tip 47.
  • Use a Basketweave technique to turn it into beautiful baskets.

Unboxing and Review of Cream Roll Cones / Cream Horn Molds EURICA 
Hello Friends, 
         Welcome to unboxing and review of Cream Roll Molds / Cream Horn Molds 5-inch large size Cream Horn Forms Pack of 16. I am so glad and get them before Christmas and made a large batch of delicious cream rolls to gift family and friends. Everyone loved these goodies.

This cream roll mold made up of stainless steel without a nonstick finish. Spray the molds with a little cooking oil/butter, so that pastry will not stick to it the mold. This mold is a spiral-like ice-cream cone, and it's easy to remove the baked pastry without cracking the baked cones. 

So cream rolls are our(Dr.K and Mine) favorite childhood goodies. And one day, Dr.K asked me, can you bake these for us? And then we started to look for mold, and here we found them on Amazon. Made pastry sheets at home, cut it into strips, and wrap them around the cone molds. Baked and once cool down filled with fresh whipping cream. 

     These molds are perfect to work with and make all of the pastries come out to perfection. Also, it did come with a tiny brush cleaner to clean them thoroughly.

Tips to Use them:
  • Spray cooking oil/butter on molds or cones before wrapping with pastry strips. 
  • Make sure not to put in the dishwasher. 
  • Once washed, dried them with the kitchen napkin.

How To Make Tandoori Chicken in Instant Pot, Without Oven / Tandoor
Hello Foodies,
         Happy holidays to you all! We hope you all had a fabulous Christmas, and now you are enjoying your holidays. I am busy with all the prep for the new year's party. How about you guys? This chicken tandoori is gonna be one of our new year's party menu. These chicken drumsticks are deliciously spiced up with tandoori masala, perfect as a starter or side dish with gravy over steamed rice. 


It's an easy and instant pot recipe. Make a big batch and refrigerate, and you have everything ready to surprise your guests.

        Juicy and tender chicken drumsticks, seasoned with tandoori masala and cooked in 10 minutes in the instant pot, it doesn't get easier than this! It is effortlessly evergreen Instant Pot Chicken Tandoori with a delicious gravy recipe you'll ever try. I like making different dishes from all over the cuisines, and yeah, I love to take pictures of what I cooked, and I love to see the happy face of Dr.K(My Husband) when he enjoys what I've made for him. And tandoori chicken is one of his favorite chicken dishes to eat as a side with steamed rice. When I first-time prepared chicken tandoori in the instant pot, and I was amazed by how the time-saving method is this. And every time I loved the way it turns out.


 Not necessary to pre-saute the chicken or onions. Its wheat-free, gluten-free. I hope it becomes your next favorite Chicken drumstick dish. Squeeze lemon wedges over if you like and enjoy the meal!

Why I have prepared gravy along with tandoori chicken:
  • This creamy and smooth seasoned gravy goes well over steamed rice and makes a perfect full meal. So in one setting, you will be done and no need to think for extra curry or sauce for your steamed rice. Also, gravy gets aroma from seasoned tandoori chicken, and that tastes awesome too!
  • If you don't want the gravy, then you can skip adding oil along with onion, tomato, and garlic. Skip adding them and add water and place the trivet and the marinated chicken. That works well too.

Cooking Time for Chicken in the Instant Pot:
  • The cooking time will remain the same, whether you have a small amount of chicken or a lot, but the time the Instant Pot takes to come to pressure will increase the more chicken you have. 
  • The time it takes to come to pressure will also be longer if you're cooking frozen chicken. 
  • No matter which size model Instant Pot you have, the number of minutes you select on the Instant Pot remains the same.
After you try this Instant Pot Chicken Tandoori, you won't want to miss:  
How to Store Instant Pot Chicken
  • Leftover cooked tandoori chicken can be stored in the refrigerator in an airtight container for up to 3-4 days or frozen for up to 1-2 months. Let thaw overnight, then use it for a weeknight dinner.

Preparation Time: 10 Minutes; Cooking Time: 10 Minutes
Marinade Time: 30-60 Minutes.
Each serving of Chicken Tandoori Contains 198 Cal.

Ingredients:
To Marinade the Chicken Drumsticks:
  • Chicken drumsticks 1.5 lbs
  • Yogurt ¼ Cup 
  • Ginger-Garlic Paste 1 Tbsp 
  • Kashmiri red chili powder 
  • Turmeric ½ Tsp 
  • Tandoori Masala 2 Tbsp
  • Lemon juice 1 Tbsp 
  • Olive oil 1 Tsp
  • Salt 1 Tsp 
To Make Curry/Masala Gravy:
  • Oil 2 Tsp 
  • Onion 1 small chopped
  • Tomato 1 small, chopped 
  • Garlic 3-4 cloves
  • Water 1 Cup 
Instructions:
To Prepare Chicken Drumsticks to Marinade:
  • Wash chicken drumstick.
  • Dry skinned drumsticks with a paper towel. 
  • Put 2-3 slits on each drumstick.
  • To marinate Chicken Drumsticks:
  • In a bowl, add yogurt, ginger-garlic paste, tandoori masala powder, salt, lemon juice, and olive oil and mix well. 
  • Now add Kashmiri red chili powder, turmeric, and mix well.
  • Apply marinade all over the chicken. 
  • Allow the chicken to marinate for 1 hour(if you have time, it's good to marinade up to 24 hours in the refrigerator and take the chicken out of the fridge 30 minutes before cooking).

To Make Tandoori Chicken in the Instant Pot:
  • Turn on the saute mode of the instant pot and heat 2 tsp oil.
  • Add onion, tomato, and garlic and mix well.
  • Add ½ Cup of water.
  • Grease the trivet with cooking oil and place inside the pot.
  • Transfer the marinated chicken pieces on the trivet.
  • Close the lid of the Instant Pot with the pressure valve to sealing. 
  • Cook on manual mode(Hi) for 10 minutes, followed by Natural Pressure Release.
  • Open the lid and take the chicken drumstick out and place it on the aluminum foil-lined baking tray.
  • Broil cooked chicken in a preheated oven for 3-4 minutes or until it becomes crispy and brown color.
  • Blend the remaining masala into the smooth and creamy gravy.
  • Delightful instant pot Tandoori chicken and gravy are ready to serve, serve with lime wedges, and cucumber over steamed jeera rice. Enjoy!!!


My Take:
  • You can make it dairy-free by using coconut yogurt
  • If you could not find Kashmiri red chili powder, you can add any mild red chili powder. 
  • You can enjoy chicken tandoori straight out of the Instant Pot, or you can broil the cooked chicken in a preheated oven for 3-4 minutes as I did.
  • If you don't find tandoori masala, then you can add 2 tsp goda masala/garam masala too.

Dietary Comment:
  • The calorie count based on a 2000 calorie diet.
  • Per serving contains 198 calories, along with 5.5 g carbohydrates, 11 g fats, and 18.5 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level. 
Good Time To Eat:
            It's good to eat Tandoori Chicken as an appetizer or for lunch or for dinner.

How to Make Hot and Spicy Mirchi Bhajji / Bajji / Pakora / Green Chili Fritters
Hello Foodies,
           Do you like chatpata(tangy), spicy, and mouth-watering Indian Street Food? I am a big fan of Indian street food. And I keep replicating Indian street food in my kitchen and feed my family and friends. This Mirchi bhajjis are one of our favorite tea time snack to munch on. To make a Mirchi bhajji, green chilies are dipped in chickpeas flour batter and deep-fried to get perfect, crispy, hot, and spicy bhajji. This snack dish is a gluten-free, vegan, and healthy treat.

            This delicious bhajji is also known as mirapakaya bajji in Andhra and is the most famous street food there. There are some other versions of Mirchi bhajji that get in Andhra Pradesh; those are Stuffed Mirchi Bhajji and Cut Mirchi bajji, which is also equally tasty. Sometimes I fry green chilies as a side with Varan-Bhat(Dal-Chaval). 


Choose a Perfect Green Chilies to Make Mirchi Bhajji:
  • While making Mirchi bhajji, always use the larger variety of green chilies that are not at all spicy. 
  • These chilies also called bhajji Mirchi or bajji Mirchi. 
  • Do remember to remove the seeds; if the seeds not removed, then the bhajji will be spicy.

How to make the Mirchi Bhajji/Pepper Fritters gluten-free?           
  • Use Besan(gram flour/chickpeas)flour or rice flour while preparing the batter. Chickpeas flour is not only gluten-free but also filled with good protein and fiber, which will also give the fritters a staying power boost. 
How are these Mirchi Bhajji Healthy?
  • These Bhajji do not contain any cheese or butter and are low in saturated fat. They provide all the nutrition from fresh green pepper, chickpeas flour, herbs, and spices.

Can we Cook Mirchi Bhajji in Air Fryer?
        Yes, I recommend this GoWISE Air Fryer. It can accommodate 4-5 fritters at a time, and for this recipe, only needed two batches to make all of them. Buying a bigger size air fryer will cost you a few dollars extra initially, but you'll save running cost and most important time while using it in the kitchen.

Preparation Time: 5 Minutes; Cooking Time: 10 Minutes.
Each Serving of Mirchi Bhajji Contains 102 Calories. 

Ingredients:
  • Mirchi /Long Green Chilies 10-12
  • Besan/Chickpeas Flour 2 Cups
  • Rice Flour 3 Tbsp
  • Red Chili powder 1 tbsp 
  • Chat Masala 1 Tsp 
  • Turmeric ½ Tsp
  • Salt 1 Tsp 
  • Carom seeds ¼ Tsp
  • Oil 1 Tbsp 
  • Water as needed to make the batter
  • Oil for frying the bhajji

Instructions: 
  • Wash and pat dry the green chilies. 
  • Slit at the center of the chili and remove the seeds and keep them aside. 


To Prepare the Batter:
  • In a bowl, add chickpeas flour(Besan), red chili powder, chat masala, turmeric, salt, and carom seeds and mix well. 
  • Now add rice flour and mix well and make sure everything is combined well.
  • Add water and mix well(add water as required) and prepare a lump free thick batter.
  • Once done, pour 1 tbsp hot oil over the batter and mix well to get a smooth and flowing consistency batter.

To Fry the Chilies/Mirchi Bhajji:
  • Meanwhile, heat oil in a kadhai. 
  • Dip the green chilies into the batter and coat it with the batter thoroughly.
  • Slide the batter coated chili into the hot oil and deep fry bhajji. 
  • Deep fry from all sides until it becomes golden brown color, and crispy 
  • Fry the bhajji on medium flame, flip over and fry from all the sides. 
  • Crispy, hot, and spicy Mirchi bhajji are ready to serve, serve warm with sauce or any of your favorite chutney. Enjoy!!! 



My Take:
  • Always fry bhajji on medium flame; otherwise, the batter will not get cooked from inside.
  • Prepare thick besan batter to prepare puffy chili bhajji
  • If you like spicy bhajji, then skip removing seeds of chili.
  • Instead of making plain bhajji, you can prepare stuffed green chili bajji by stuffing potato mixture.

  • The calorie count based on a 2000 calorie diet.
  • Per serving contains 102 calories, along with 9.68g carbohydrates, 5.1 g fats, and 2.1 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
Good Time To Eat:
            It is good to eat Mirchi bhajji for lunch, dinner, or evening snacks.

How to Make Quilled Christmas Card
Hello Everyone,
       Wishing you a wonderful Christmas Season creating special memories with your beautiful family. With lots of love and Happy Christmas!


       I have crafted a Christmas card and quilled earrings for a friend. The secret to any good DIY greeting card is the paper you use. It needs to be somewhat thick and substantial; card stock is ideal. To transform a piece of paper like this into a card, simply fold it in half. Once you’ve folded the card, glue the created quilling ornaments and some half-cut pearls.

        I spent no more than 15 minutes creating ALL of these cards and more! I love how the cards turned out, and I’m saving time and money! Making your cards for your friends and family can be an enjoyable hobby.




 When you design your greeting cards, you have control over the look and sentiment so that your card delivers just the right message. So guys, make some cards that are simple in design and use them for multiple occasions.

How to Make Eggless Cream Rolls with Homemade Puff Pastry Sheets
Hello Foodies,
         Most of us have a memory of food that takes us back to childhood. It can be as simple as a candy bar that we used to get as a treat during our childhood. These emotional memories, associated with both the food you ate and the atmosphere in which you ate it, have become part of your adult sense of self. 


These cream rolls are one of our(Dr.K & Mine) favorite childhood goodies. If you grew up in India like me, chances are you've eaten a cream roll at least once. They are conical rolls of flaky dough, and they're filled with sweetened flavored cream and garnished with Cherry/Desiccated Coconut/colored Sugar. 


       Cream rolls are the perfect tea-time snacks or sweet and have tons of texture from the crusty outside to the cream-softened inside. The flavors of an all-butter dough and freshly whipped cream are unbeatable, and this homemade version trumps any other!

Last weekend Dr.K(My Husband) asked me if these can be made at home because I'd forgotten how much I loved them. Then I started to google it and found lots of versions. But the common thing in all recipes was pastry sheets. And unfortunately, I was out of pastry sheets, and I am so lazy to go to the grocery store, so I started making pastry sheets from scratch. And Voila! I end up making these flaky, delicious, and bakery-style egg-free cream rolls. So guys, relive your old golden childhood days and prepare these easy-to-make Cream Rolls at home from scratch.


Ingredients:
To Prepare Rolls/Puff Pastry: 
  • All-purpose flour 2 cups + 3-4 Tbsp for sprinkling as needed
  • Sugar 2 Tbsp
  • Butter 8-10 tbsp, unsalted, cold and cubed
  • Salt ¼ Tsp
  • Lemon Juice 1 Tbsp
  • Ice cold water as needed to knead the dough 
To prepare the cream filling:
  • Heavy Whipping Cream ½ Cup
  • Powdered Sugar 4-5 Tbsp
  • Vanilla extract 1 Tsp
Garnishing:
  • Cherry
  • Desiccated Coconut
  • Colored Sugar 

Instructions:
To Prepare the Pastry Dough:
  • In a mixing bowl, add all-purpose flour, salt, and sugar, and mix well. 
  • Now, add lemon juice, cubed butter(4 Tbsp), and rub the butter into the flour with your fingertips until combined.
  • Pour in the ice-cold water and bring the dough together(It should be quite soft).
  • Form it into a rough dough mass, place the dough over the cling film(plastic wrap) and cover it and keep aside for 30 minutes.

To Roll and Mold the Cones using Pastry Dough:
  • Now divide the dough into equal portions( I made 12 equal-sized balls from the dough) and using a rolling pin roll the dough to make a rectangle shape. 
  • Spread the butter over each layer of rolled dough with the help of a spatula. 
  • Take another rolled dough to place it over to the first one and do the same for remaining rolled dough (as shown in the video).
  • Cover the rolled dough with cling film and chill for 30 minutes. 
  • After 30 minutes, remove cling wrap and roll out the dough again into a rectangle shape(as shown in the video).
  • Trim the edges of the rectangle to even them out, then cut it into the long and thin strips(1.5-2 cm) to wrap around the cones(If the dough feels warm, place it in the fridge again).
  • Lightly butter/oil the outsides of steel cones/molds. 
  • Starting with the tip, wrap the strips of dough around the cone(making sure they overlap a bit and stick to each other well; otherwise, they'll separate in the oven, so make sure the tip is well covered with the dough).
  • Apply water at the end and seal the edges.
  • Place the cones with the tip pointing upwards on another baking tray and place in the fridge for 15-20 minutes(the cones have to be cold before you bake them so that the result is excellent and flaky).

To Bake the Cream Rolls:
  • Preheat the oven to 350°F(180°C). 
  • Brush each cone very well with the milk, to get a nice color and shine.
  • Bake for 20 to 25 minutes at 350°F (with the cones placed vertically, tip facing upwards) until golden-brown on the outside
  • Once they're done, let them cool for 5 minutes, then gently slide them out of the cones, moving from the broad to narrow end. 
  • Repeat with the remaining strips of dough. 

To fill the baked cones with the cream:
  • Whip the heavy whipping cream, sugar, and vanilla with a stand mixer, until thick, fluffy, and you see stiff peaks forming when you lift the beaters(if you are using a stand mixer, it will take 5 minutes to whip cream, sugar).
  • Fill each cone with the cream and store leftover cream in the fridge for 3 to 4 days.
  • Top with cherries or colored sugar, and it's ready to munch on. Enjoy!!! 


How to Store Cream Rolls and Shelf life
  • Filled rolls will keep in the fridge in an airtight container for 3 to 4 days(although the texture is best on days one and two). 
  • The cones can be made 2 to 3 days ahead and filled as needed as well. Make sure they're always in the fridge to prevent them from going soft in the humidity. 

My Take:
  • Depending on how many cones you have, you can either prep them all at once, or do them in batches.
  • While baking, if any strips have separated, press them together while you remove the cones from the molds. It helps them keep their shape.
  • The oven-safe steel cones on which to mold the dough are essential. 
  • While baking, if you see that the individual strips of dough seem to be separating, just gently lay the cone down horizontally and continue baking.

  • The calorie count based on a 2000 calorie diet.
  • Per serving contains 198 calories, along with 21.36 g carbohydrates, 13 g fats, and 2 g protein.
  • Portion size can always be increased or decreased depending on your health goals and activity level.
