How to Make Best Whipped Coffee / Dalgona Coffee at Home in 5 Minutes
Hello Friends, 
          Let's go with the trend and make fluffy and delicious Dalgona Coffee / Whipped Coffee! This creamy, fluffy 4 ingredients coffee known as Dalgona in South Korea is taking over social media during the coronavirus lockdown.

For those of us who rely on the daily cappuccino, lattes and iced coffees, then this Dalgona Coffee is the new way to enjoy it at home. So friends, what is actually a Dalgona / Whipped coffee means? So whipped coffee is a kind of coffee in which coffee, sugar, and water/milk whipped until light, creamy and fluffy. Once the coffee is fluffy and creamy spoon it over dairy or non-dairy milk for a delicious sweet treat. It can be made cold or with warm milk and then mix it up and sip away. You can make it vegan by using almond milk, soy milk or oats milk. So give it a try and click a photo and share it on #AaichiSavali.

Hot or cold milk?
You can use anyone! If you want cold coffee, use ice cubes and cold milk. But you wanted it hot, you would heat up milk, then stir it into the hot milk. 

Can we make Dalgona coffee without the sugar?
Yes, we can make it without sugar too, it does fluff up in the same amount of time as sugar, but it doesn’t stay fluffy as long as the sugar version. You should make this with sugar if you want the results and the fluffiness!

What if you don’t have a hand mixer?
You can make whipped coffee using a stand mixer, or hand whisk or by hand! But being Whipped by hand takes 10-15 minutes and good arm workout. And stand mixer will do it in less than 2 minutes, so use it for a speedier process. 

Preparation Time: 5 Minutes. 

Ingredients:
  • 2 Tbsp Instant Coffee
  • 2 Tbsp Sugar, Granulated
  • 2 Tbsp Water, Cold/Hot
  • 1 Cup Milk(you may use almond milk, soy milk too) 


Instructions: 
  • In a bowl add coffee, sugar, and boiling water and using a hand mixer whip the coffee on a higher speed for 2 minutes. 
  • Scrape down the sides and whip again until it's light brown and holds stiff peaks when the whisk is removed. 
  • Take a glass and add ice cubes, pour cold milk and top it with a dollop of the frothed coffee mixture on top. 
  • Sprinkle some cinnamon or cocoa on the top(optional), then mix it up and sip away. Enjoy!!! 


My Take:
Given measurements of coffee, sugar and water can make 2 servings, so keep it in the fridge and use it within a couple of hours.

  • Per serving contains 261 calories, along with 40 g carbohydrates, 8 g fats, and 8 g protein.

How to Make Delicious Gurudwara Style Kada Prasad
Hello Foodies,
      Kada Prasad is one of the Indian delicacies that served in Gurudwara as a prasad. It is soft, smooth, and rich halwa/sheera made with whole wheat flour. It is a silky soft wheat flour halwa/pudding made with just four ingredients, Whole Wheat Flour, Ghee, Sugar, and Water. It is super easy to make with four main ingredients used in a 1:1:1:1 ratio. 


        Kada Prasad is also known as Atte Ka Halwa or Atte ka Sheera or Wheat Flour Pudding. It is one of the easiest delicious desserts to make. It immersed in ghee, and if you are worried about adding that much ghee, you can reduce the quantity to 1/2. Also, I have made it without making sugar syrup, and I found it very easy and quick to make. So try this delicious halwa dripping with ghee, warm and sweet-smelling.

Preparation and Cooking Time: 15 Minutes.
Each Serving of Kada Prasad Contains 446 Cal.

Ingredients:
  • 1 Cup Ghee
  • 1 Cup Whole Wheat Flour 
  • 1 Cup Sugar
  • 1 Cup Water

Instructions:
  • Heat ghee in a pan and add wheat flour. 
  • Ghee roast wheat flour on medium to low flame till golden brown.
  • It takes about 8-9 minutes, where the flour turns from light brown to a biscuit, almost deep golden brown.
  • Stir until the ghee separates from toasted wheat flour, and the mixture turns a deep golden color with a nutty aroma.
  • Once the Flour changes color, add water and sugar and keep stirring until sugar and water mixed with the flour and ghee.
  • When the Ghee starts to separate, switch off the gas, and here Kada Prasad is ready to serve. Enjoy!!!


Recipe Notes:
  • All the ingredients should be in equal proportion.
  • Stir, stir and keep stirring continuously.
  • Keep an eye on the color of the flour; don’t burn it but slow roast it.
  • Use Homemade Ghee to make Kada Prasad.
  • You can replace the sugar with jaggery, following the same recipe and ratios.
  • You can also use Sugar-Free instead of sugar and jaggery.

How to Make Aloo-Shimla Mirch Ki Sabzi
Hello Foodies,
       If you try making this aloo-Shimla mirch ki sabzi/potato-bell pepper stir fry this way, then I am sure you will make it again and again, and you will forget the other method. 
Although I may get stoned for saying this, Instant Pots are not great for every type of recipe. There are times when you're better off using a skillet to intensify the flavor and produce a better overall texture.

Preparation time: 10 Minutes; Cooking time: 20 Minutes
Each serving of Potato-Capsicum stir fry contains 142 Calories.

Ingredients:
  • Potatoes 3-4
  • Green Bell Pepper/ 1 Cup, Cubed
  • Tomato 1 small, cubed
  • Onion 1 small, chopped
  • Garlic 2 cloves, chopped 
  • Ginger 1 Tsp, Chopped 
  • Green chilies 5 strips
  • Cumin seeds 1 Tsp 
  • Asafoetida 1 pinch
  • Red chili powder 1 Tsp 
  • Turmeric 1 Tsp
  • Coriander powder ¼ Tsp
  • Garam masala ¼ Tsp
  • Lemon juice 1 Tbsp 
  • Salt 1 Tsp 
  • Coriander 2 tbsp, chopped
  • Oil 2 Tsp
  • Water 3 Cups to boil the potatoes 


Instructions:
To Boil/Cook Potatoes in the Instant Pot:
  • Turn on the Instant Pot and add 2 cups of water into the insert of the instant pot. 
  • Place a trivet with potato pan(I have made a slit in the potatoes, that helps to cook potatoes well and in less time). 
  • Add water 1 Cup and close the lid of the instant pot. 
  • Place the vent on the sealing position. 
  • Cook on manual mode(Hi) for 3 minutes. 
  • NPR for 10 minutes and then release the remaining pressure manually. 
  • Open the lid and let the potatoes cool down. 
  • Once cool, peel the skin of the potatoes.


To Prepare Potato-Green Pepper Stir Fry:
  • Heat oil in a pan and splutter/crackle cumin seeds.
  • Add chopped ginger, garlic and onions, and saute and cook for 1-2 minutes on medium to low flame. 
  • Add capsicum/ green pepper, and green chilies, and saute for 3-4 minutes or until the pepper becomes slightly browned around the edges and softened too. 
  • Now add boiled and cubed potatoes and mix well.
  • Add red chili powder, turmeric powder, garam masala, coriander powder, salt to taste.
  • Stir well until potatoes and pepper coated with the spices. 
  • Now, add tomatoes, cover the pan and let it cook for about 3-4 minutes, stirring occasionally.
  • Once done, garnish with the coriander leaves and potato-bell pepper stir fry is ready to serve. 
  • Serve potato-bell pepper stir fry along with chapati, phulkas, or as a side dish for dal-chawal. Enjoy!!!
