How to Prepare Maharashtrian Style Pithale-Bhakri Thali


Namaskar Mandali,

            Pithale-bhakari and thecha! Yum! I know mouth is watering, right? So sharing today Assal (pure) Maharashtrian, absolutely delicious and healthy pithale bhakri, thecha and tanduljachi bhaji recipe. The staple meal of the Maharashtrian cuisine bhakri (jowar/bajra) accompanied by raw onion, a green chili thecha / chutney, any green leafy vegetable stir fry, pithale / jhunka and plain rice(Bhat). This meal has now become popular as street food and as a restaurant's thali menu in Maharashtra. The Maharashtrian meal contains arrays of different vegetables, pulses, pickles, chutneys, koshimbir and sweets.
             This Thali or plate is filled with lots of nutrients, and top of it's vegan, vegetarian and gluten-free.



Vegetarian lunch or dinner plates in Maharashtrian families are a combination of :
  1. Chapati, Bhakri (jowar /bajra)
  2. Plain Rice or Masale Bhat
  3. Koshimbir, Raita or Matta
  4. Papad, sandge, and kurdaya
  5. Chutneys, mango or lemon pickles
  6. Aamti or Varan
  7. Green leafy vegetables
  8. Usal (sprouted legumes)

So here I am sharing pure staple food of Maharashtrian cuisine that includes :

        Maharashtrian celebrations like weddings, parties are incomplete without a tasty and spicy Masale Bhat. Today I am sharing this simple, vegan, gluten-free and healthy Masale Bhat (vegetable pulao) recipe which is prepared using an instant pot and it is great for the busy morning. This is great to put in the lunch box too. It is a simple and one pot rice recipe, which doesn’t need much work. The flavors and spices which go through this dish are perfect. Masale bhat is always considered as a complete meal without any side dish to it. Also, it is often served as a rice dish in a thali. Prepare the spice mix masala ahead in advance and use it whenever you like to prepare this flavourful masala bhat.
          Addition of vegetables makes this rice more healthy and flavorsome. One serving of Masale Bhat has 5.4 g protein and 3 g dietary fiber.

Ingredients :

To Prepare Spice Powder / Masala for Masale Bhat :

  1. Coconut grated 1 Tsp
  2. Cinnamon 2 small sticks
  3. Cardamom 2 pods
  4. Cloves 3-4
  5. Cumin seeds 1 Tsp
  6. Sesame seeds 1 Tsp
  7. Red Chilli Powder 1 Tbsp
  8. Coriander powder 1 Tsp 

To Prepare Masale Bhat in Instant Pot :

  1. Rice 2 cups
  2. Curry leaves 10-11
  3. Onion 1 medium, 200 g
  4. Tomato 1, 90 g
  5. Ginger-garlic paste 1 Tsp
  6. Peanuts 1 Tbsp
  7. Cauliflower 150
  8. Potato 1, chopped (100g)
  9. Green peas ¼ Cup 60g
  10. Turmeric powder 1 Tsp
  11. Salt 1 Tsp
  12. Water 3 Cups

Instructions :

To Prepare Spice Powder / Masala for Masale Bhat :

  1. In a grinder/blender add coconut, cinnamon sticks,
    cardamom pods, cloves, cumin seeds, sesame seeds, red chili powder, and coriander powder.
  2. Grind to make a powder or masala and keep aside. 

To Prepare Masale Bhat using IP :

  1. Wash rice under tap water and keep aside.
  2. Turn on instant pot and press sauté function, heat veg. oil and splutter curry leaves.
  3. Now add chopped onions stir-fry for 2 to 3 minutes or until the onions start to turn brown.
  4. Add chopped tomatoes, ginger garlic paste, and peanuts and cook until the tomato begins to break down.
  5. Add cauliflower, potatoes and green peas, saute and mix well.
  6. Now add turmeric powder, salt, prepared masala powder and half of the coriander leaves and mix well.
  7. Add rice, mix all and add water 3 cups.
  8. Close the lid, place the vent on sealing position, and cook for 6 minutes at high pressure.
  9. Naturally release the pressure for 10 minutes, then move the valve to release any remaining pressure.
  10. Open the lid, mix the rice, and garnish with fresh grated coconut and coriander leaves.
  11. Tadaa, a healthy bowl filled with veggies and nutrients, is ready to serve, serve with raita, curd or with any curry. Enjoy!!!

Calorie count is based on a 2000 calorie diet.
It makes 8 servings.
Per serving contains 250 calories, along with carbohydrates - 48.01 g, dietary fibers - 2.95 g, fats - 4.88 g, proteins - 5.4 g.

       It's good to eat Masale Bhat for lunch or brunch.

How to Cake Step-by-Step Guide


Eggless Vanilla Cake 

          It is two-layered round cake with eggless vanilla cake layers. Here you can find the recipe for

Buttercream Frosting :

           The cake is filled with buttercream frosting. For buttercream frosting click here.
I assembled the accessories out of fondant, those are sorting hat, Harry Potter's glasses, wand, broomstick, golden snitch.

Scarf / Gryffindor Flag :

The upper layer of cake is covered with white fondant and a bottom layer with red and yellow fondant.

The Sorting Hat :

  1. I have used dark brown fondant to make a sorting hat.
  2. Take small ball sized portion of brown fondant and roll to
    make it a teardrop shape.
  3. Bend the bottom by pressing it on the table and sharpen the edge, then give a wavy effect at the top.
  4. Using fondant tools create mouth, eyes, and nose.
  5. Lastly using fondant tool create wrinkles all around the hat, and a sorting hat is ready. 

Broomstick :

  1. Roll a small portion of dark brown gum paste/fondant, one end should be little and slightly pointer than the other.
  2. To Make Broom, roll fondant into a teardrop shape and make a little hole using a ball tool.
  3. Add glue and insert sticks handle into the Broom.
  4. Score, little tiny lines into the
    Broom and at the end of the Broom make tiny cuts.
  5. Use yellow fondant and cut it into little tiny strips and glue it around the handle of the broomstick. 

Harry Potter's Glasses :

  1. Roll out some black fondant, cut it into two circles using a round cookie cutter and then use 2A tip and cut the inner circles.
  2. To make the arms of the glasses, roll out the black fondant and cut it into the half.
  3. Give it a little bend and assemble the glasses, by placing one arm over the other and cut off the excess fondant and glue it.
  4. Now adding glue place the lenses over the arms and glasses are ready.

The Wand :

  1. I have used brown fondant to make a harry potter's wand. The wand has a skewer in it to keep it straight.

Golden Snitch :

  1. Roll white fondant into a ball and use golden dust to make it glittery.
  2. Roll white fondant and give it a wings shape, and at the end insert a toothpick to attach them to the ball and apply golden dust.

Homemade White Chocolate 


Hello Foodies,
      This is one easy way to add coconut oil and magnesium to your daily diet! Today I have prepared this white chocolate from scratch at home, with no special tools.

Ingredients :

  1. Coconut oil ½ Cup
  2. Milk powder ½ Cup
  3. Icing Sugar / Powdered Sugar 3 Tbsp
  4. Butter / Ghee 1 Tsp (Optional)
  5. Sprinkles (Optional) 

Instructions :

  1. Melt the coconut oil using
    double boiler method (heat a pan with a cup of water and later place a large bowl, making sure it doesn’t touch the water).
  2. Now add powdered sugar, milk powder, and vanilla extract and mix well with coconut oil, it should be smooth and silky.
  3. Use a spoon to transfer the mixture into a candy silicone mold and add some sprinkles.
  4. Freeze for 20-25 minutes, or until completely set.
  5. After 25 minutes chocolate is ready to serve, take it out from the fridge and remove it from the mold. Enjoy!!! 

My Take :

  1. The number of servings depends on the thickness of mold used, as does set up time.
  2. Keep the homemade chocolate in the fridge in an airtight container.

How to prepare Instant Khoya Modak / खवा मोदक

The modak is the favorite sweet of the Hindu God, Ganesha(गणपती बाप्पा). It begets him the
moniker modakapriya (one who likes modak) in Sanskrit. During Ganesh Chaturthi, The puja always concludes with an offering of 21 modaks to Ganesha as prasadam (प्रसाद). So today I have prepared this Instant version of Modak by using khoya. Khoya or Mawa Modak is a mouth melting, and Shahi treats to our taste buds. It has its unique taste and texture. The best thing is that it is much easier to make than the traditional modak. Celebrations or festivals like Ganesh Chaturthi is the time to make abundant varieties of Modaks, and Khoya Modak is one of them.

Preparation and Cooking Time: 15 Minutes.
Each Serving Contains 90 Calories.

Ingredients :

  1. Khoya / Mava 1 cup
  2. Sugar ⅓ cup, powdered
  3. Cardamom powder 1 Tsp
  4. Saffron few strands + 2 Tbsp warm milk/water
  5. Dry fruits (Optional)

Recipe :

  1. In a kadhai heat khoya and saffron mixture and cook for 3 to 4 minutes and let it cook.
  2. In a bowl add Khoya, powdered sugar (you can add more or less sugar as your taste) and cardamom powder.
  3. Knead all together to make a soft dough.
  4. Grease the modak mold with ghee, add the mawa dough into it, form the shape and cut excess dough.
  5. Bring out of the modak mold.
  6. Here, delicious, quick and Ganapati Bappa’s favorite modaks are ready to serve. Enjoy!!!

Per serving contains 387 calories, along with carbohydrates - 22 g, fats - 27.5 g, proteins - 15.1 g.

         Cake Flour is used in cake making to bake a lovely soft cake. I first time heard of cake flour when I moved to the USA. I didn’t know you could make your own. In this post, I’m going to share with you how to make cake flour. To make cake flour, all you need is just 2 ingredients that are all purpose flour and cornstarch. Once you try this, you will never ever, purchase cake flour again! This worked wonderfully in an eggless vanilla cupcake. Those cupcakes were so light and fluffy, and I genuinely feel it is due to the homemade fresh cake flour. I had no idea, but now that I know I'll never purchase it again.

Ingredients :

  1. All Purpose Flour / Maida 1 Cup
  2. Corn Starch 2 Tbsp

Instructions :

  1. Remove 2 Tbsp of all-purpose flour from the 1 cup of all-purpose flour.
  2. Now, add 2 Tbsp of cornstarch back in the bowl and sift 5-6 times together before using.
  3. Here, easy to make, cake flour is ready to use.

My Take :

  1. Store it in an airtight container and use within 2-3 months.
  2. The cornstarch should be thoroughly combined with the flour and the mix to be light and airy.
  3. If you're allergic to corn, potato starch and arrowroot powder also make a good substitute.

  2. Use a spoon to transfer the mixture into a candy silicone mould. 
  3. Tap the mould and keep it in the fridge for 5 minutes.
  4. Now, add nuts, marshmallows, and wafers.
  5. Fill the remaining portion with the chocolate and tap the mould.
  6. Fridge it for 15, and after 15 minutes chocolate is ready to serve, take it out from the fridge and remove it from a mould. Enjoy!!!
