Bored of eating sabudana khichdi, varai bhat or potato stir fry then try this easy peasy fasting sandwich recipe. Fasting Potato Sandwich or Toast is one of the yummy fasting dish, which is stuffed with fresh coconut and peanuts. This toast is an irresistible breakfast or snack dish, which is perfect to eat whenever you feel hungry during fasting days and or you can eat it any other day too. Try this delicious toast, prepared by using boiled potatoes and tapioca pearl flour.
       The ingredients used to make these toast are being readily available, quick to cook and good to taste and its ideal wholesome alternative to khichdi or sabudana vadas.  I have prepared this non-fried, low calorie, gluten-free and vegan potato toast or sandwich. It is also no onion, no garlic recipe, as it is a fasting breakfast or snacks recipe enjoyed all around the Indians during fasting days / vrat / upvas. Do try it today.

Ingredients :

  1. To Make Dough :
    1. Potato 2 medium, boiled and mashed
    2. Sabudana flour ½ cup (Shingada flour / Rajgira flour)
    3. Salt ¼ tsp
  2. To Make Stuffing :
    1. Fresh Coconut grated, ½ cup
    2. Peanuts 2 tbsp, dry roasted 
    3. Cumin seeds 1 tsp
    4. Green chilies 5 strips
    5. Coriander leaves 2 tbsp, chopped
    6. Salt 1 Tsp
    7. Lemon juice 2 tbsp
    8. Veg.oil 2 tbsp

Instructions :

  1. To Make Dough :
    1. In a mixing bowl add boiled and mashed potatoes, sabudana flour, and salt.
    2. Mix all and knead to make a dough, cover and keep aside.
  2. To Make Stuffing :
    1. In a grinder add fresh coconut, peanuts, cumin seeds, green chilies, salt, coriander leaves.
    2. Grind to make stuffing for potato sandwich.
  3. To Make Potato Sandwich :
    1. Roll out two 8 inch dough and spread the coconut stuffing on the rolled dough. 
    2. Cover it with the other
      rolled dough and press the edges using a fork.
    3. Heat a tava or skillet and place the stuffed dough on the skillet and cook it until golden brown by applying oil to both the sides. 
    4. Using a knife, cut the cooked sandwich into 4 parts.
  4. Here, tasty and healthy potato sandwich is ready to serve,
    serve hot with curd, raita, or with lassi. Enjoy!!!

My Take :

If you need you can use milk or water to knead the dough.

Based on a 2000 calorie diet. It makes 12 servings.
Per serving contains 70 calories, along with carbohydrates - 10 g,
dietary fibers - 1.12 g, fats - 4.8 g, proteins - 2.36 g.












Health Benefits of  potato sandwich :

  1. Sago or sabudana is food which is full of energy and carbohydrates.
  2. Minerals like calcium, iron and some others are contained by sago which helps in the improvement of joints and bones.
  3. Potatoes like sabudana are also rich in carbohydrates which makes them an excellent source of energy which comes handy when you are fasting.
  4. Peanuts, apart from being rich in carbohydrates peanuts also contain proteins which your body needs during fasting.
  5. Peanuts contain B complex, vitamins like niacin, riboflavin, thiamin, vitamin B6, vitamin B9, pantothenic acid, etc.

            This healthy and easy to prepare methi parathas can be eaten as a breakfast dish or as

an evening snack, or you can pack them in tiffin box too. A paratha can be eaten simply with a pat of butter spread on top or with chutney, pickles, dahi or raita or with meat or vegetable curries.
             Fenugreek leaves have a strong aroma and a slightly bitter taste, but it tastes wonderful when mixed wheat flour and some Indian spices. Fenugreek leaves are known to reduce cholesterol and reduce the risk of cardiovascular diseases. It is also very good for Diabetes as it slows down the rate of sugar absorption into the blood. Ingredients :

  1. Fenugreek Leaves / Methi 1 cup, chopped
  2. Wheat flour 1 cup
  3. Red chili powder ½ tbsp
  4. Turmeric powder 1 Tsp
  5. Salt 1 Tsp
  6. Carom seeds / Ajwain 1 Tsp
  7. Ginger 1 tsp, minced
  8. Veg. Oil 2 Tsp

Instructions :

  1. In a bowl add whole wheat flour, chopped fenugreek leaves, red chili powder, ginger paste, salt, turmeric powder, carom seeds and mix all well.
  2. Now, knead a soft dough by adding water and take few drops of oil over palms and again knead for 1 minute.
  3. Divide dough into equal portions and by dusting flour roll each portion into a circular shape.
  4. Heat the girdle or tava over medium flame and cook the parathas on both sides by applying some oil each side, cook until golden brown spots appear.
  5. Here, tasty and healthy Methi Paratha is ready to serve. Serve hot with curd, raita or with the pickle. Enjoy!!!

Ingredients :

  1. Onion 1 Large, chopped
  2. Tomato 2 Medium, chopped
  3. Cashew nuts 15 to 20
  4. Green chilies 3 strips
  5. Ginger-garlic paste 1 tbsp
  6. Red chili powder ½ tbsp
  7. Turmeric powder 1 Tsp
  8. Coriander leaves ¼ cup
  9. Veg. Oil 1 Tsp
  10. Water ½ cup

Instructions :

  1. Turn on instant pot, press saute button and add oil and chopped onions, saute and cook for 1
    minute.
  2. Now, add tomatoes, cashew nuts, ginger-garlic paste, green chilies, red chili powder, turmeric powder, coriander leaves and saute all well.
  3. Add ½ cup of water, mix all well and close the lid.
  4. Place the vent on sealing position and cook for 5 minutes at high-pressure manual mode.
  5. Naturally, release the pressure
    (NPR) for 5 minutes and then move the valve to release any remaining pressure.
  6. When the pressure is down, open the lid and allow to cool.
  7. You can add cooked mixture into a grinder and grind to make a smooth paste. Or
  8. Use a blender stick and blend until the gravy masala is smooth.
  9. Here, instant and easy basic gravy masala is ready to prepare different curries. Enjoy!!!

       Naga Panchami is a traditional festival, on this day worship of snakes observed by Hindus throughout India. Panchami is the fifth day among the fifteen days of the moon's waxing and/or waning. This special day of the snake worship always falls on the fifth day of the Hindu month of Shravan (July/August). (This year nagpanchmi is on 15th August 2018). Hence this is called Naga

Panchami. On the Nag Panchami day, cobras(Naga), and snakes are worshipped with milk, sweets, flowers, wheat flour and jaggery lamps(कणकेचे दिवे), Wheat Kheer(गव्हाची खीर) and this puranache dind(पुरणाचे दिंड). In villages, the anthills(वारुळ) where the snakes are thought to reside, are searched. Incense is offered to the anthill as prayer along with milk (a traditional story of folklore to feed milk to the snakes) to ensnare snakes to come out of the anthill. After this, milk is poured into the hole in the anthill as a libation to the snake god.
            Nag Panchami is around the corner and to celebrate this nag Panchami I am sharing here Dind recipe. This traditional Maharashtrian sweet recipe is a steamed wheat flour wrap and chana dal and jaggery stuffed sweet dumplings recipe. There is tradition or ritual that, on Nag Panchami day, no deep frying is done by those who celebrate the Nag Panchami festival. So mostly steamed food such as dind(पुरणाचे दिंड), wheat flour lamps (कणकेचे दिवे), wheat kheer(गव्हाची खीर), bajra lamps (बाजरीचे दिवे), patolya, etc. are cooked on Nag Panchami. You need a steamer to make this all steamed recipes. I have used instant pot(electric pressure cooker) to steam Dind. You may use an idli steamer or modak steamer or pressure cooker too. So let's start with the recipe.

Ingredients:

To Make Dough :


  1. Whole Wheat Flour 1 cup
  2. Salt ½ tsp
  3. Veg.oil 1 tbsp
  4. Water to knead the dough
To Make Puran / Stuffing :
  1. Chana Dal / Chickpeas / हरभरा डाळ ½ cup
  2. Jaggery / गुळ ½ cup
  3. Turmeric powder ½ tsp
  4. Dry fruits, crushed(cashews,
    almonds, pistachios) 2 tbsp
  5. Cardamom Powder 1 Tsp
  6. Nutmeg Powder ¼ tsp
  7. Water as needed.

Instructions :

To Make Dough :
  1. In a mixing bowl add wheat flour, salt, and veg.oil and knead into a dough using enough water.
  2. Drizzle some oil over dough,
    cover and keep aside.

To Make Puran / Stuffing for Dind :
  1. Clean and wash chana dal.
  2. Turn on instant pot and add a cup of water.
  3. In another pan add water 2 cups, turmeric powder, chickpeas/chana dal, and veg.oil.
  4. Place pan into the instant pot and close the lid with the vent on sealing position.
  5. Cook on high-pressure manual mode for 8 minutes and followed by NPR.
  6. Add the cooked chana dal into the strainer to drain all the water. (You may use this water to make 'Katachi Amti').
  7. Heat a pan and add cooked chana dal and jaggery, mix well and cook on a medium flame for 10 to 12 minutes or till the mixture thickens, while stirring continuously and mashing at regular intervals.
  8. Now, turn off flame, cool Puran or stuffing slightly, mash it using a masher or place it into the grinder and grind it to make excellent consistency.
  9. Add the cardamom, nutmeg powder, and crushed dry fruits and mix well.
  10. Divide it into equal portions and roll to make square shape stuffing. 
To Make Dind :
  1. Knead the dough a little and make equal size small balls and roll into a circle of about 3 to 4-inch size.
  2. Place a stuffing square in the middle and fold into a square or rectangle.

To fold the Dind :
  1. Fold the top and bottom sides of the circle over the stuffing.
  2. Then fold the remaining two sides and press very lightly to keep them together.
  3. Place a banana leaf in the steamer and grease it with ghee / veg.oil.
  4. Place the dind on the banana leaf in a single layer. Do not put them in a double layer, as they will stick when cooked. 
To Steam the Dind :
  1. Turn on instant pot and pour 1 cup of water.
  2. Now place the steamer and close the lid of the instant pot.
  3. Place the vent on sealing position and steam it for 10 minutes using steam mode of the instant pot.
  4. NRP for 5 minutes and then quick release.
  5. Once done pour ghee and serve hot with kheer. Enjoy!!!
To Serve Dind :
  1. Make a hole in the Dind and add ghee in that and its ready to serve.
  2. You may also serve dind with wheat kheer.
My Take :
  1. You may cook chana dal on the stove top in a pot or in a pressure cooker until it is soft or need to cook chana dal about 2-3 whistles.
  2. If you don't have a banana leaf, you can use a cloth, or you may grease the plate with a little oil.

            Gavhachi kheer is a traditional, authentic Maharashtrian delicacy, mainly prepares on the occasion of Nag Panchami. It is prepared from cracked wheat and to make it sweet, I have used jaggery. Preparing it in instant pot is really a very easy and simple task. You have to pour all the ingredients into the pot, close the lid and cook for 10 minutes, that is it. This is healthy as it contains lots of nutrients like fiber and Iron. Cracked wheat fits well in a low-fat diet. Here, I have used cracked wheat to prepare this kheer, you can use whole wheat if you have it. But I find it is a time-consuming process, so instead of whole wheat, I have used broken wheat. Let's start with the procedure.


Course : Dessert
Cuisine : Indian, Maharashtrian.
Prep Time: 10 Minutes
Cook Time: 15 Minutes

Ingredients :
  1. Cracked wheat ¼ cup
  2. Milk 1 ½ cup
  3. Jaggery(Brown Sugar) 1/4 cup
  4. Cashews, chopped 1 tbsp
  5. Almonds, chopped 1 tbsp
  6. Pistachios, chopped 1 tbsp
  7. Charoli / Chironji 1 tbsp
  8. Cardamom powder 1 Tsp
  9. Ghee 2 Tsp
  10. Saffron few strands + warm water 2 tbsp
  11. Water 1 cup(hot water)

Instructions :
  1. Turn on the instant pot to saute mode, once hot add ghee to the pot and add cracked wheat, almonds, cashews, pistachios to the pot.
  2. While continuously stirring, allow the cracked wheat to roast until you can smell it is fragrant and it turns a golden brown color.
  3. Add cardamom powder, jaggery, hot water, and hot milk stir well to incorporate the ingredients thoroughly.
  4. Place lid on pot and lock, place the vent on sealing position to prevent steam from escaping.
  5. Press cancel to turn off saute mode and press manual function and set the timer to 10 minutes.
  6. NPR for about 10 minutes and after 10 minutes, manually release any existing pressure.
  7. Open the lid, turn on saute mode of the IP and pour saffron and water mixture, ½ cup of milk and mix all well and cook for 2 minutes and it's ready to serve.
  8. Tadaa, delicious, tasty whole wheat kheer is ready to serve.
  9. Serve hot with wheat flour lamps or with wheat flour dind Enjoy!!!

My Take :
  1. I have used cracked wheat to prepare this kheer, you can use whole wheat if you have it.
  2. To make a vegan version you can use coconut oil instead of ghee.
  3. To make a vegan version you may use coconut milk instead of cow's milk.
  4. You can use brown sugar or any other sweetener instead of jaggery or gur.
  5. You may omit the raisins, almonds or cardamon based on personal preference
  6. The quantity of jaggery depends on your taste.

  1. It is a superfood which is easily digestible, has a low glycemic index and has very low in calories and fat and also contribute to the well-being of the person.
  2. Cracked wheat is an excellent source of fiber. It provides 3 g of fiber per serving.
  3. Low in fat: Cracked wheat fits well in a low-fat diet. It has no saturated fat and cholesterol.
  4. Heart Health: Eating cracked wheat every day will help in thinning of the blood and helps the heart to perform the cardiovascular functions effectively.
  5. Diabetes: Broken wheat is a power-packed cereal which has all the essential vitamins and minerals. It also has a very low glycemic index.

Ingredients :

To Prepare Jaggery syrup :
  1. Jaggery ½ cup
  2. Water ¼ cup
To Prepare Dough :
  1. Whole wheat flour 1 cup
  2. Semolina 2 tbsp
  3. Cardamom powder 1 Tsp
  4. Nutmeg Powder ¼ tsp
  5. Saffron few strands + 2 tbsp warm water
  6. Salt 1 pinch
  7. Ghee 1 tbsp

Instructions :

To Prepare Jaggery Syrup :
  1. Mix Jaggery and water in a bowl, strain it and keep aside.
  2. To Prepare Dough :
  3. In a bowl mix whole wheat flour, semolina, cardamom powder, nutmeg powder, salt,
    saffron and molten ghee.
  4. Now add jaggery syrup (little at a time) into the wheat flour mixture and knead to make a hard or stiff dough.
  5. Pour some oil over the dough and keep aside.
To Make Lamps / Dive :
  1. Divide the dough into equal sized balls.
  2. Take a small dough ball and press it in the center with the
    thumb.
  3. Now with the thumb and index finger make a deep hole to give it a shape like a bowl.
  4. Pinch one side of the dough bowl to make a tip of the lamp.
  5. Similarly, make remaining lamps from the dough (I have prepared 11 Lamps).
  6. Place a banana leaf or clean cloth over the steamer and arrange the lamps over it.
To Steam the Lamps :
  1. Turn on instant pot and pour 1 cup of water into the instant pot.
  2. Now place the steamer and close the lid of the instant pot.
  3. Place the vent on sealing position and steam it for 10 minutes using steam mode of the instant pot.
  4. NRP for 5 minutes and then quick release.
  5. Once done pour ghee and serve hot with kheer. Enjoy!!!

This healthy Beetroot Paratha goes well for breakfast or lunch box for kids as well as for adults too. Beetroot is good for eyes as it is rich in vitamin A and iron. Serve this beetroot paratha with coriander chutney, pickle or curd. Beetroots have always been included most recommended vegetable list, it is one of the most essential ingredients used to make a detox salad. Beetroot has sweet, earthy flavor, also it is a powerhouse of many nutrients that help to improve your health.

Preparation Time: 15 Minutes; 
Cooking Time: 15 Minutes.
Each Beetroot Paratha Contains 124 Cal.

Ingredients :

  1. Beetroot 1, grated or pureed
  2. Whole wheat flour 1 cup
  3. Green chilies 3 strips
  4. Red Chilli powder ½ tbsp
  5. Salt 1 Tsp
  6. Carom seeds 1 tsp
  7. Ginger ½ tsp, paste
  8. Turmeric powder 1 Tsp
  9. Olive oil 2 Tsp

Instructions :

  1. In a mixing bowl add wheat flour, grated beet, green chilies, red chili powder, salt, turmeric powder, ginger and carom seeds, mix all well and by adding water knead to make a soft dough.
  2. Divide the dough into equal parts and make paratha from it.
  3. Roll the paratha and roast it on hot pan or tawa to both the sides with oil.
  4. Serve this Paratha hot with coriander chutney,
    pudina chutney or with plain curd, pickle.
  5. Here, healthy, tasty and nutritious beetroot paratha is ready to serve. Enjoy!!!
