How to Make Raw Jackfruit Stir Fry



The jackfruit is starchy and fibrous and is a source of dietary fiber. The flavor is similar to a tart banana

Ingredients:

1: 2 pounds of unripe jackfruit flesh
2: 2 medium sized onions
3: 3 medium sized potatos
4: Curry leaves
5: Cilantro(coriander)
6: 4-5 Garlic cloves

Instructions:

-- vertically chopped skin pealed potatoes 
-- vertically cut medium size chops of unripe Jackfruit flesh 
-- Vertically chopped onions 

Saute chopped potato in frying pan using 4-5 tea spoons of olive oil(or any oil of chef choice) till potatoes obtain fine light brown color. Similarly saute chopped Jackfruit flesh.
Pick a non stick frying pan(any cookware of chef's liking) add 4-5 tea spoon of olive oil add pinch of mustard seeds , pinch of cumin seeds, chopped cilantro stems, curry leaves, chopped garlic cloves and chopped onions. 
Saute this combo till onion  have light brown  color. To this add salt to taste , 2-3 tea spoons of red chili powder and mix it well for even  distribution of chili powder and salt.

To the above combo add sauteed potatoes and Jackfruit flesh.Cooking Jackfruit fry would not take no longer than 10-15 minutes.This fry would give nice kick of spicy chili of potato and sweet flavor from Jackfruit flesh. Once done garnish it with fine chopped cilantro and spray some lemon over it.

Bronzini Fish fry and Fish curry

Bronzini is a Greek fish can be prepared in a variety of ways (e.g. grilled, steamed in parchment)and it tastes like sweet-flavored, semi-firm white meat. 


In this this culinary recipe I will show how to cook Bronzini fish very much in Indian style of cooking 










Ingredients:

1:  Three medium size fishes(well cleaned)
2:  Two large onions 
3:  Cilantro(Coriander) 
4:  One medium size tomato
5:  Grated coconut (50 grams or 1.76 ounces)
6:  Ten green Chilies
7:  4-5 garlic cloves
8:  4-5 full Cashews
9:  Tamarind paste (2 tea spoons).
10: Salt (2-3 tea spoon or chef liking)
11: Red chili powder(2 tea spoons or or chef liking)
12: Turmeric powder (half a tea spoon)
13: pinch of Asafoetida(Hing)
14: Half a tea spoon of Ginger paste.
15: 3-4 dried ghost peppers
16: pinch of mustard seeds.
17: pinch of cumin
18: four cloves
19: 2-3 cardamom seeds
20: 1 Cinnamon Stick 
21: 100 grams or 3.52 ounces of maize flour.

Cooking:

- Saute(A) chopped onions(2)  in a frying pan using 4-5 tea spoons of olive oil (or any oil) will the onions draw nice light brown color and then place it in mixer grinder.

- Saute(B) chopped cilantro stems , grated coconut , chopped chilies, garlic cloves , cashews  in a frying pan using 4-5 tea spoons of olive oil (or any oil) till coconut obtains a nice light brown color and then place it in mixer grinder.

-   Mixer grinder has Saute(A) and Saute(B) to this add chopped tomato, (9), (10), (11), (12), (13), (14), (18), (19), (21). Grind the above mixture till it comes a fine paste. This mixture will be a common ingredient to stuff fish or fish curry (we will call it fish mixture).

Fish Fry:

Take two medium fish , chop off the head and this chopped off head can be used in curry . Now stuff these two fished with our fish mixture(use 25-30% of the mixture) and keep it for marination for 30-45 minutes.

After 30-45 minutes sprinkle some maize flour and squeeze some lemon over the marinate fishes. Now as per chef liking either grill it or deep fry it. Bronzini fish cooks up really quickly it shouldn't take more then 5-10 minutes. So be careful while grilling or deep frying. 

Fish Curry:

 Take the remaining fish chop off the head and with rest of the fish body have it cut into medium sizes chops.
marinate the chops with remaining fish mixture for for marination for 30-45 minutes.

After 30-45 minutes  take  a non stick cookware and place the cookware over medium flame . Add 4-5 tea spoons of vegetable oil or olive oil , when the oil heats up add (15), (16), (17).

Add the marinated fish chops with fish mixture with 2-3 cups of warm water. Keep stirring this curry starts to boil. Add chopped Cilantro(Coriander) leaves and stir the curry. As I said earlier  Bronzini fish cooks up really quickly this shouldn't take more than 15 minutes to cook. with this your fish curry is ready to eat.
