             I have prepared this chicken biryani to celebrate the dhulivandan. A raw marinated meat is layered with raw rice before being cooked together. The dish is cooked layered with the meat and the yogurt-based marinade at the bottom of the cooking pot and the layer of rice (usually basmati rice) placed over it. I make this at least once a month, and I’ve yet to find anyone who doesn’t love it. Marinating is a must for best results. Chicken Biryani is a savory rice dish that's loaded with spicy marinated chicken, caramelized onions, mint leaves and flavorful saffron and some whole spices. Chicken is one of the highest protein suppliers.
              This is fantastic one pot dish. Perfect for some summer heat, or for some warming winter spice.
This instant pot version of chicken biryani is so easy to make, nice comfort food, served it with a cucumber, onion, tomato and yogurt raita. Delicious, simple and super quick, this is a perfect weeknight meal! So let's start.

Preparation Time : 30 Minutes ; Cooking Time : 30 Minutes.
Each serving of chicken biryani contains 332 cal.

 
Ingredients :

To Marinade Chicken :
  1. Chicken breast 1 lbs
  2. Yogurt ½ cup
  3. Red chilli powder ½ tbsp
  4. Turmeric powder 1 tsp
  5. Ginger-garlic paste ½ tbsp
  6. Salt 1 tsp
  7. Garam Masala 1 tsp
  8. Cumin Powder 1 tsp
  9. Coriander powder 1 tsp
  10. Coriander leaves ¼ cup
  11. Mint leaves ¼ cup
  12. Lemon juice 2 tbsp

To Make Chicken Biryani :
  1. Basmati Rice 2 cups,(wash & soak in water for ½ hour)
  2. Onion 2 medium, chopped
  3. Green chillies 2,chopped
  4. Shah jeera 1 tsp
  5. Bay leaf 2
  6. Cinnamon stick
  7. Cloves 4
  8. Cardamom 4 pods
  9. Peppercorn 4
  10. Red chilli powder ½ tbsp
  11. Coriander powder 1 tsp
  12. Cumin powder 1 tsp
  13. Ginger garlic paste ½ tbsp
  14. Salt 1 tsp
  15. Turmeric powder 1 tsp
  16. Saffron 1 tsp mixed in warm milk
  17. Mint leaves
  18. Coriander leaves
  19. Ghee / Butter 2 tbsp
  20. Fried onions 3 tbsp for garnishing(optional)
  21. Water 2 ½ cup

Instructions :

To Marinade Chicken :
  1. In a bowl add chicken pieces, yogurt, ginger garlic paste, red chilli powder, turmeric powder, garam masala, cumin powder, coriander powder, salt, mint and coriander leaves and lemon juice mix all well and coat chicken pieces evenly.
  2. Keep in the refrigerator for half hour.

To Make Chicken Biryani :
  1. Wash and soak the basmati rice in water and keep aside for 30 mins.
  2. Turn on IP to saute mode, add ghee / veg. oil, once oil get hot add shahjeera, bay leaf, cinnamon stick, cloves, cardamom, black pepper corn and let it splutter.
  3. Now to the pot add sliced onions, chopped green chillies and cook stirring frequently for 5 to 6 minutes or until the onions are golden
    brown.
  4. Once onions get cooked well add red chilli powder ½ tbsp, garam masala, turmeric, cumin powder, coriander powder 1 tsp each, salt 1 tsp, ginger garlic paste ½ tbsp, and mix all well.
  5. Add marinated chicken, mix well, and add ½ cup of water to the pot.
  6. Close IP and turn pressure valve to sealing. Set IP to Manual mode for 3 minutes and follow with quick release.
  7. Meanwhile, drain the rice and gently pour over the chicken and add 2 cups of water.
  8. Close IP and turn pressure valve to sealing, set IP to Manual mode for 6 minutes and follow with Quick release.
  9. Garnish with the fried onions, saffron milk mixture, mint leaves and coriander leaves.
  10. Tadaa, mouth watering and flavorsome Chicken Biryani ready to serve, serve hot with raita. Enjoy!!!

To Make Raita :
  • In a bowl add yogurt, onions, cucumber, coriander leaves, tomatoes and pinch of salt and mix all well. Raita is ready to serve.

  • Based on a 2000 calorie diet.
  • It makes 8 servings.
  • Per serving contains 332.5 calories, along with carbohydrates - 48.47 g, dietary fibers - 2.64 g, fats - 5.4 g, proteins - 21.17 g.
