5 Easy ways to make fluffy and crispy paratha

( 5 Easy ways to make paratha fluffy, crispy / Restaurant Style Lachedar Paratha /  रेस्टॉरंट जैसा पराठा बनाने के ५ आसान तरीके पहली बार युट्युब पे )

Soft layers concealed by crisp outer layers parathas are made in every home, every home has its own way or method of making parathas. Here are my ways to make parathas. Hope you all will like it, pour your love and please let me know which way you liked the most!

Preparation Time :10 minutes ; Cooking Time : 10 Minutes ;
Rising and Cooling Time : 30 Minutes.


Ingredients :

  1. All purpose flour 2 cups
  2. Milk powder 1 tbsp
  3. Sugar 1 tbsp (optional)
  4. Salt 1 tsp
  5. Ghee / Butter 3 tbsp
  6. Water 1 cup to knead dough

Recipe :
To Make Dough :
   In a bowl add all purpose flour, milk powder, salt, sugar and mix all well and by adding water knead for 4 to 5 minutes to make a soft dough. Cover and keep aside for 15 minutes.




Different Styles or Ways to Make a Paratha :

1) Cone Shape Way :
       Take dough ball, roll out dough with the help of rolling pin in a circular shape (appro. 7-8 inch in diameter). Now spread ½ tsp ghee evenly over entire surface and sprinkle ½ tsp all purpose flour over it.   
      Now, with the help of cutter or knife, make half cut from centre to edge. Then roll out and this will look like a cone shape, then place big size of cone over rolling board and press down from another side, and then you will see the layers. ( To follow perfect procedure, see the video ).

2) Rectangular Shape Way :
        Take dough ball, roll out dough with the help of rolling pin in a rectangular shape (appro. 7-8 inch in diameter). Now spread ½ tsp ghee evenly over entire surface and sprinkle ½ tsp all purpose flour over it.
        Hold from one side and fold to keep on another side & pleat the paratha till the end. Roll the pleated edges tightly and twist it from both the side and join the edges to make round shape dough ball (as shown in the video).

3) Pleated Way :
         Take dough ball, roll out dough with the help of rolling pin in a circular shape (appro. 7-8 inch in diameter). Now spread ½ tsp ghee evenly over entire surface and sprinkle ½ tsp all purpose flour over it.                        
         Hold from the edges start to fold & pleat the paratha till the end. Roll the pleated edges tightly and join the edges(as shown in the video).

4) Circular Shape Way :
         Take dough ball, roll out dough with the help of rolling pin in a circular shape (appro. 7-8 inch in diameter). Now spread ½ tsp ghee evenly over entire surface and sprinkle ½ tsp all purpose flour over it.
         Hold from the edges start to fold paratha till the end and roll the pleated edges tightly, twist it and join the edges to make round shape dough ball (as shown in the video).

5)  Laccha Paratha :
         Take dough ball, roll out dough with the help of rolling pin in a circular shape (appro. 7-8 inch in diameter). Now spread ½ tsp ghee evenly over entire surface and sprinkle ½ tsp all purpose flour over it.   
          Now with the help of cutter or knife cut the rolled paratha into small parts then keep cutting parts over one another one by one and roll the pleated edges tightly and roll to make round shape dough ball (as shown in the video).

( For best results cover and place this pleated dough into refrigerator for 15 minutes ).

To Make and Cook Paratha :
     Take out pleated dough balls from refrigerator, lightly dust with flour and now roll into round parathas.
      Heat the tava and  place the paratha on the tava when little bit hot apply ghee, turn the paratha when one side is partly cooked and apply ghee on the other side. Cook for a minute, flip again for a couple of times, till the parathas are browned evenly and well cooked. Here, multilayered, fluffy, crispy and yummylicious parathas are ready to serve, it taste awesome with paneer curry, chickpeas curry, dal makhani, or with any Indian curry. Enjoy!!!



Dietary Comments :
Based on a 2000 calorie diet.
Per serving contains 195 calories, along with carbohydrates - 27.71 g, dietary fiber - 1 g, fats - 7.77 g, proteins - 4.2 g.

* For best results place this pleated dough into refrigerator for 15 minutes
* These paratha dough can be frozen too. Take them out 1 to 2 hours before  you want  to prepare them and leave to defrost. Then cook as described above.!
